Ricotta is becoming the NEW cream cheese. With half the calories per serving and just about 3 times less fat, you can make a delicious sweet and savory toast topper. Mix 1/4 cup of Ricotta Cheese with 1/4 tsp nutmeg , 1/2 tsp cinnamon, 1 TBS honey, and fresh blueberries topped over your choice of toast. Perfect with morning coffee or a dessert!

One of my favorites for a low carb Lunch or Dinner! Lettuce Wrapped Cheeseburgers! ( Romaine lettuce wraps)Topped with homemade Thousand Island, Cherry Tomatoes (cut in pieces), Thinly sliced Red Onion, Fresh Mozzarella (sliced), little chopped Jalapeño! The meat is 80% chuck and I like to mix my beef with 1 egg, 1/4 of organic oats, Cajun Spices, Salt, Pepper, Garlic Powder. Low Calorie 1,000 Island dressing ( 1/4 Plain Greek Yogurt, 1/4 Cup Mayo, 1 TBS Sweet Relish, 1 Tbs Mustard, I TBS Ketchup, salt pep to taste! It pulls together so well! carb
