My sourdough is a FOUR day process.
Day 1: make dough
Day 2: ferment
Day 3: stretch and folds
Day 4: bake and sell
So, if you want to guarantee you have your bread for Saturday, WEDNESDAY is the day to get your order in!!
I try to have a few extras on Saturdays but there are no guarantees unless...
