A question I’m asked often is about process.
It all begins Thursdays. I start with 200 g starter. Add 800 g flour also 800 g water. This will ferment for 12 hours. I then take this add more flour water allowed to ferment another 12 hours. Total after 24 hours I have 13.5 kilograms usable starter
Friday mornings I will mix 5 sourdough batches. Bulk fermentation/ shaping take approximately 5 hours. These loaves are loaded into a huge cooler for 12 hours of fermentation
Saturday night I begin baking and shaping side breads baguettes etc.
