Hi friends!!

It’s been a little quiet over here, but life has been full in the best (and busiest) way lately. Between work picking up speed and a lot of work trips sprinkled in, our bake rhythm got a little off. We’ve missed you all a lot 💛

Behind the scenes, we haven’t slowed down, just shifted seasons. The garden is coming back to life and we’re really leaning into it this year. More intention, better planning, and hopefully a steady flow of blooms, herbs, and maybe even some extra produce to share with you 🌿

One of the things we’re most excited about… we’re getting honey bees 🐝🍯

Thousands of little garden helpers joining us soon, which means future honey for baking and jars is officially part of the dream.

This morning alone we harvested 75+ tulips, which feels like a pretty sweet sign of what’s to come 🌷

All that to say, we’re easing back into baking this week with a few small batches.

Good morning y’all!

The bakery is open now through Weds afternoon. If you’ve been craving our tartys, this is your sign to grab some.

Our popular Raspberry and Strawberry flavors are already selling, but don’t worry if you see they’re sold out, we’ll keep adding more as the week goes on.

Pancake mixes and chocolate chip cookies are also back on the menu!

From now until Wednesday evening, the bakery is open for a special pop up menu.

We know this was a quick announcement, so thank you for rolling with the short notice.

We are doing the most popular flavors!

If you happen to see that items are sold out, don’t worry. We'll keep restocking and adding more throughout the next few days until the shop officially closes the menu.

We are sorry for the late post!

WE ARE SELLING OUT QUICK BUT, we are gonna start adding more tomorrow! Be out on the look out!

Hey yall!

First, thank you. The support from this community has been unreal.

Both of us have set a goal for this year: to continue investing in our skills and raising the bar for what we bring to you.

One big goal? To enroll in a multi-day intensive pastry workshop at Le Cordon Bleu in France, to deepen our technical training and refine classic French techniques, then bring those skills straight back home to Royal Oak community and beyond 🙂

We’re not enrolled yet. We’re baking toward it.

Our bake days are helping fund that next step. Every order supports us continuing our education and reinvesting in this business so we can keep improving and delivering better and better products to this community.

This isn’t just about a trip.

It’s about becoming better bakers.

For you. For the community. And yes, for a dream that’s been quietly waiting in the background for a long time.

Yesterday was our first pop-up ever.

Up until now, Bitchin’ Bakes has only existed inside our home kitchen, fueled by flour, controlled chaos, and a healthy amount of imposter syndrome. We’ve always quietly wondered who we thought we were doing this… and yesterday, you answered that question for us.

Josh pulled an all-nighter to make sure every pop tart was fresh, and still showed up to Sidetrack Bookshop’s Galentine’s event running on fumes and adrenaline. Watching him hand pop tarts across the table to all of you, after making them in the middle of the night in our tiny kitchen, felt surreal in the best way.

Thank you to everyone who came out, waited in line, brought friends, tried something new, or just stopped by to say hi. And to — thank you for inviting us, trusting us in your space. We are so honored to have been part of something that celebrates community the way you do. Also thank you for selling me the most rad pop tart earrings made by the incredibly talented midwest artist to wear for the occasion. I felt fully on brand.

By the end, we had just one loaf of bread, a few cookies, and some cookie boxes left. St. Mary’s Catholic Church hosts a free Soup & Sandwich to-go meal on the third Sunday of every month from 3–4pm, and because our pop-up ended at 1pm, we were able to box everything up and drop it off just in time.

I did profusely apologize while handing over a loaf labeled “xoxo bitch” inside a Catholic church, which is not a sentence I ever anticipated saying. Thankfully, they welcomed it all with kindness (and humor), and we were grateful the food could go to people who needed it.

We’re still processing it all. Thank you for showing up. Thank you for believing in us. And thank you for making our first pop-up unforgettable.

Hey Bitchin’ Bakes fam!

We want to be real with you about this last batch of Pop Tarts.

(because it's bothered us in all types of ways)

They ended up shrinking a bit more than usual during baking because we overworked the dough and developed too much gluten.

That extra gluten strength caused them to tighten up in the oven basically, we were fighting the dough instead of letting it do its thing.

The good news?

We figured out exactly what happened and have already adjusted our process so it won’t continue moving forward. Growth comes with learning curves, and we’re committed to dialing in every batch.

Thank you for supporting our little home bakery and giving us space to grow and refine. We appreciate you more than you know. 🫶
