Essie's Sweets Essie's Sweets I am a kindergarten teacher turned stay-at-home. I am living my dream as a Mom and I wanted to make my son's childhood as fun as possible.

That's why I started making cakes. I have a dear friend who is incredibly gifted at making custom cakes. She made our wedding cake, and has inspired me with every cake I've seen her make. I kept thinking "Wow! I could never do that!". Then I had a son, and I really wanted him to have these kinds of special cakes too. I also want to teach him that he can do anything he wants to do, even if he's too

intimidated to try. So, one day I just decided I needed to stop saying "I can't" and give it a shot. That was 3 years ago and with each cake I make, I love it even more! This has turned into a very fun and relaxing hobby for me. My son is now old enough to encourage me on as I make each cake, saying "It's boo-i-ful, Mommy!" and it works! He definitely has the gift of encouragement! I think he also hangs around in the hopes of catching an extra little snippet of fondant or leftover icing! Email: [email protected]

Just thought I'd share this baking tip- I used to buy the flour spray, but it's expensive and not always even so the cak...

Just thought I'd share this baking tip- I used to buy the flour spray, but it's expensive and not always even so the cakes still stick. Then I would spend time cutting out perfect pan circles...until I realized the only part that really sticks is the center. So now I just imperfectly cut a rectangle of parchment paper, trim the corners and lay it on a sprayed pan. Then I coat with flour, tap the pan to get rid of whatever flour doesn't stick and it's ready to go. It's the best method I've used so far- saves time, parchment paper, and money ;)
