🐥$8 slow cooked, shredded chicken breast dinner

I don’t really measure my seasoning, it’s more like going with the flow and covering all sides with seasoning, or whenever my ancestors tell me to stop.

In the morning, just add chicken breasts, salt, pepper, ground cloves, paprika, onion powder, garlic powder, mustard, BBQ sauce, brown sugar, ground cinnamon, black truffle hot sauce, and maybe 1/2 cup of chicken stock or just water in your slow cooker. Slow cook on Low for 6-7 🙄 hours. The meat will just fall apart at the end so not much shredding will be needed!

Frozen green beans from Costco is a life saver.

I made some hamburger buns yesterday using a recipe from https://natashaskitchen.com/hamburger-buns/. It took me about 30 minutes to whip it up and clean. The rest of the time was for proofing and baking.

This $8 worth of meat was enough for dinner for us 5, meal preps for my husband for the week, and some leftover for the kids lunch tomorrow. And it took me maybe an hour or two max of prepping and cleaning. Happy cooking!

🍕 45 minute pizza in 1 bowl 🥣

Ingredients:
-Warm water (105 degree is ideal)
-2 tablespoons olive oil
-2 teaspoon instant yeast
-1 teaspoon sugar
-1/2 teaspoon garlic
~2 cups of flour, I used bread flour
-any pizza sauce and mozzarella cheese + toppings you want

Instructions:
Add warm water, yeast, sugar, and oil in a bowl.
Mix well.
Wait 5 minutes.
Add flour, salt, and garlic in the bowl.
Mix well until all ingredients are incorporated.
Oil the bowl.
Cover the bowl with a towel and wait until the dough doubles, took me 20 minutes this time!
Sprinkle some flour (I used semolina but you can just use regular flour) on a tray.
Knead the dough 3-4 times into a ball.
Roll the dough out.
Fold and pinch the edge down.
Poke holes with a fork.
Add pizza sauce and mozzarella cheese (I bought a block of mozzarella cheese and shredded it) and whatever toppings (I freezed a big bag of pepperonis and take some out as needed) you want on top.
Bake at 425 degree for 20ish minutes, every oven is different, so just watch out the first time!

Here’s your daily reminder to keep going. Don’t give up. You messed up something? That’s okay. Just try it again. And again. And again. Tell yourself that you WILL make it happen. And it WILL happen. Might take just the next try. Might take another 999999th attempt. But it will happen. And when it finally happens? 😮‍💨🤌🏼😘💃🏻💥✨💫☄️

I didn’t make an edible loaf of sourdough the first time. Or the few times after that. You’ve watched me the past few months trying to learn how to steam milk to make art latte. Success is 50% mindset and 50% grind!

🐔$20-30 MEAL PREP IDEA FOR THE WEEK

$12 for 3 lbs ground chicken from Sam’s Club
Optional ingredients/side add-ons: Sweet onion, garlic, bell peppers, cilantro, beans, cheese, tortillas, rice, potatoes, salsa.

Wait until the pan is hot, add oil.
Wait until oil is hot, add chopped onion.
When the onion is half way translucent, add chopped bell peppers and garlic.
Cook until onion is translucent.
Transfer to a plate.

Add a bit more oil.
Wait until oil is hot, add ground chicken. Spread it evenly on the pan.
Season with what I have on one of the pictures all over the surface, mix, season again. Tajin and cumin are my favorite things to add to ground chicken!
Cook until you see no more pink chicken, then stop! Nobody likes overcooked chicken! Save some juice so the chicken stays moist when you reheat.

1 cup of ground chicken is 35g of protein!

Meal Ideas:

You can use this ground chicken for taco bowls with some beans and Greek yogurt, breakfast bowls with some eggs, with rice ( has 32oz of Spanish rice for $6.99 if you don’t feel like making your own), roasted potatoes, veggies, etc.

Canned beans and tortillas are always handy when you have too many kids running around for more cooking.

Use egg noodles and rice cooked in chicken stock for more protein.

✨EASY 5 MINUTES PREP HOMEMADE YOGURT✨

In a big bowl, add 1 can condensed milk.

Using the same can, add 2 cans of boiling water. Mix until the condensed milk is dissolved.

Using the same can again, add in 3 cans of whole milk (whole milk is better at solidifying, you can use 1% but it’ll be runny). Mix well.

Add in about a quarter cup of yogurt. I like using the A2 yogurt from Costco, it gives the perfect tang, but any PLAIN one will be just fine.

Mix well with a whisk.

Transfer everything into smaller containers. I reuse Oui jars. But wide mouth mason jars work just fine.

Add in your Instant Pot some hot water. Put your jars in the pot. Set it to Yogurt mode, medium heat, 12 hours.

After 12 hours, wipe the jars dry and refrigerate. I don’t know how long they last in the fridge. We usually finish it in a week.

Make sure to save about a quarter cup to make your next batch so you don’t have to keep buying yogurt stater from the store!

For granola, I just melt about half a cup of coconut oil in the microwave, mix in another half cup of maple syrup. Add a teaspoon of salt, teaspoon of ground cinnamon, teaspoon of ground ginger, and vanilla extract. Add in 3 cups of rolled oats, half cup chopped pecans, half cup pumpkin seeds. Mix everything together. Spread on a baking sheet. 320 degree for about 45 minutes to an hour or until golden brown. Make sure to mix it around half way so it can be cooked throughout. Let cool completely for a few hours before storing.
