After mixing my brown butter chocolate chip cookie dough, I let it rest in fridge (36°F) and cold ferment for another 48 hours. Here’s why:
🍪a richer, more complex flavor
🍪a slight tang that balances the sweetness and chocolate
🍪make the dough more tender over time

FYI:
I use Pasture-raised eggs from our local farm- info is on the egg carton. She has the best eggs! Hence, healthier and tastier cookie🙌🏻

I use KerryGold unsalted butter for its higher fat content( European butters are typically around 82% butterfat, compared to about 80% in many standard U.S butters). Hence, the creamier texture and richer flavor.

AND I’ve also checked the commonly used Kirkland sweet cream unsalted butter, but I don’t like that it includes ‘natural flavor’ in the ingredient list. 🤷🏻‍♀️

I maybe a bit overreacted about those ingredients. But…. I don’t wanna feed my family nor sell things I don’t feel comfortable with when I have a choice.

Chive & Parmesan sourdough focaccia

Adding a little extra and colorful, the chive flowers! This literally makes me feel like creating a painting. It’s one of those simple little moments in baking that slows me down and makes me appreciate how beautiful food can be.

I will have classic sourdough, pecan cranberry bread, Jalapeno & cheddar bread and soft milk bread(Japanese milk bread).

Customers favorite brown butter choco cookie, mint chocolate brown butter cookie, and brown butter cinnamon rolls.

Rain or shine, I’ll be there with all the goodies!
