Be strong in your faith.

Some of us are afraid, understandable. Some are annoyed, totally valid. Some are overwhelmed, yep! šŸ™‹šŸ¼ā€ā™€ļø

It’s so hard not to let the anxiety take over, but in times like these we have to control the controllable and give the rest to God.

Things I can control:
-Fueling my body the best I can to support a healthy immune system.
-Washing my hands!
-Exercising daily.
-Washing my hands!
-Taking my vitamins daily.
-Washing my hands!
-Not touching my face, including mouth, nose, and eyes.
-Washing my hands!

So we can control some things. šŸ¤·ā€ā™€ļø

Roasted Cauliflower Soup

Ingredients:
1 head cauliflower florets, washed and cut
1 package frozen cauliflower rice
1 medium yellow onion, diced
2 cloves garlic, minced
2 cups white beans, drained and rinsed
1/2 cup walnuts, soaked in hot water for 1 hour
1 quart vegetable stock
3/4 cup full fat coconut milk
2 tsp Garlic powder
1 tsp Smoked paprika
Salt & pepper to taste
Avocado oil
Crushed red pepper flakes (optional)

Instructions:
Preheat an oven to 350 degrees.
Drizzle the cauliflower with a tsp of avocado oil and arrange it in a single layer on a baking sheet and roast for 15 minutes until lightly browned.
Place a large pot over medium heat and add 2 tsp of avocado oil. Add the onions and cook until they are caramelized.
Add the garlic and cook 2 minutes more.
Add all of the other ingredients except the coconut milk and bring to a boil, reduce the heat and simmer 10-15 minutes more.
Blend the soup in batches adding the coconut milk to each batch or use and immersion blender to blend it in the pot.
If the soup is too thick, add more stock until it reaches the desired consistency.
Serve immediately with a drizzle of avocado oil and a sprinkle of crushed red pepper flakes.
Cool and keep in an airtight container under refrigeration for up to five days.

Are you in a hurry to get to the finish line?

I have been so guilty of this feeling lately. The problem is, if you focus on the destination, you lose sight of the journey.

The journey is necessary to reach the goal. Everyone’s journey looks different, we are all running our own race. But I need to be where I am now to get to where I am going. Just like I needed to be who I was last year to get to where I am now.

I am so grateful that I began this journey almost a year ago. I was lost and searching for something that would bring passion back into my life. I had no idea what I would find.

-Purpose
-Passion
-Community
-Drive
-Discipline
-Sisterhood
-Friendships

And so much more! I didn’t know that saying yes to a group would have such a profound impact on my life and the lives of those around me. I could never have foreseen this being my journey, but I am here for it.
I may not be exactly where I want to be, but I am so much closer than I was before I began!

This year has taught me to always be open to what God has in store and willing to walk the path he has laid out no matter how uncomfortable it may be. Never say never!

I have been thinking a lot about my why lately. I am just 21 days from the end of this program and it is getting harder to keep going.

I have to remind myself daily of why I am doing this.

This is me, my life, my journey there is no destination, no finish line. I’m not getting ready for an event, living healthy is the event.

I think in some ways it’s harder that I don’t have a finish line. I mean, this program will end, but I will keep going, so it never stops. It’s easier to commit to something that has an end point, but then you’re always just starting over again.

I’m done starting over! Are you?

Sorry if y’all are tired of pumpkin recipes! This one turned out so good, it’s almost gone!

Paleo Chocolate Chip Pumpkin Bread

Ingredients:
2 cups almond or oat flour
1/4 cup gluten-free organic oats
1/4 coconut flour
1 tsp baking soda
3/4 tsp baking powder
3/4 tsp salt
1 tsp each: cinnamon
1/4 tsp cloves
1/4 tsp nutmeg
1/4 tsp ginger
1 1/2 cup mashed, overripe banana (about 3 medium bananas)
1/2 cup pumpkin puree
1/2 cup pure maple syrup
2 tbsp coconut sugar
2 Tbsp coconut oil, at room temperature
2 tsp pure vanilla extract
optional 1/2 cup Evolved dark chocolate chips

Instructions:
Preheat oven to 350 F. Grease a 9Ɨ5 loaf pan, or bundt pan, and set aside.
In a large mixing bowl, combine all dry ingredients.
Blend all liquid ingredients in a separate bowl,
then pour wet into dry and stir to form a batter. Smooth into the prepared pan. If desired, press some extra chocolate chips into the top. Bake on the center rack 45 minutes, then do not open the oven door but turn off the heat and leave in the closed oven for 10 additional minutes.
If it’s still undercooked after this time then just turn the heat back on and cook–checking every 5 minutes–until firm. Let cool completely, then cover and refrigerate overnight. (I skipped this step because I couldn’t wait to taste it 😬 but it is definitely better the next day! @ Porter, Texas

Trust me, you will not miss the meat in these tacos!

Veggie Tacos with Vegan Chipotle Cream
For the tacos:
1 tsp avocado oil
1/4 small red onion, sliced thin
1 cup riced cauliflower
3/4 cup cubbed sweet potatoes, roasted at 350 until fork tender
3/4 cup black beans, drained
2 cups baby spinach
1/2 tsp sea salt
1 tsp garlic powder
1 tsp smoked paprika
1 tsp granulated onion
1/2 tsp ground cumin
4 almond flour (or other) tortillas, lightly toasted
1 avocado, sliced
1/4 cup cilantro leaves, washed
Instructions:
In a medium skillet heat the avocado oil. Add the onion and sautƩ 1-2 minutes, add the cauliflower and continue to cook 3-4 minutes more. Add sweet potatoes, black beans, and seasoning. Cook 3 minutes more until all the veggies are warmed, then add the baby spinach and combine. Cook until the spinach is just wilted. Place two tortillas on a serving plate and top each with 1/4 of the veggies.

For the sauce:
1/4 cup walnuts or cashews, soaked in warm water (I used walnut flour because that’s what I had)
2 medium chipotle peppers in adobo sauce
1/2 lime, juiced
1 clove garlic
1/2 tsp smoked paprika
1/4 tsp ground cumin
Salt to taste
Instructions:
Place all ingredients into a blender (include the water from the nuts) and blend until fully combined.
Top the tacos with the sauce and serve with cilantro leaves and avocado.

Going into the holidays like šŸ’ƒ

I have never felt this ready for holiday season! At this time last year I was feeling my worst. After Thanksgiving I had hit a low point and just needed a change. I was my heaviest in years and didn’t know how to change. I had been trying for months with no success. šŸ˜ž

A lot of my friends and family didn’t understand why I wasn’t just waiting until the new year. Why I was choosing to not indulge in all the food during the holiday parties. Why I was choosing healthy over the alternative.

I had made a decision. It was important to me. More important than eating and drinking my way through the end of the year and feeling terrible everyday.

Something you need to know about me, when I decide to do something, I GO ALL IN!! And I’ve never looked back. It’s been almost a year. A lot of like has happened and I’ve learned how to make this my lifestyle.
•Not a diet!
I have never felt deprived. I am able to have the foods I really want, just in a healthy way that keeps me on track.

I want YOU to know how great it feels to be doing something amazing for your body and your life. When we make a positive change, we encourage those around us to change too. Think of how your family could change over the next few months to create new healthy habits.
