I’ve decided to start sharing recipes sometimes… here’s the very first one!

I did test this with a gluten free flour blend too and it came out great. I think next time I’d increase the sugar to 3/4 c.

Fresh Nectarine (or Peach) Muffins
Makes 12

Ingredients
• 2 cups flour (or gluten free flour blend)
• ½ cup-3/4 c. sugar
• ½ tsp salt
• 4 tsp baking powder
• 1 cup milk
• 1 egg
• 6 Tbsp melted butter
• 1 cup fresh nectarines (or peaches), chopped
Instructions
Preheat oven to 400°F. Sift the dry ingredients into a mixing bowl. Combine the milk, egg, and melted butter, then stir into the dry ingredients. Gently fold in the chopped nectarines. Spoon the batter into greased muffin tins (fill most of the way) and sprinkle the tops with a little sugar. Bake 18–25 minutes, depending on your oven. Enjoy!
Perfect for breakfast, brunch, or anytime you need a little sunshine in muffin form. 🍑
