Did y’all know?

Our dough is made with wild yeast, which means it’s alive! It rests for 24 hours in our walk-in after rising, arresting the rise just where we want it while the living yeast breaks down the gluten proteins and gives our bread the classic tangy taste and look of sourdough crumb (notice the holes?)

Sourdough’s fermented dough is naturally gut friendly. (Even if our starter is a bit sassy)

Autism is still widely misunderstood and largely unaccommodated.

If you are curious, follow and other great creators! We want to be understood and loved as-is. Much of our lives are lent to masking: acting like everyone else to fit in when in reality our nervous systems need a much different approach. Why do we do it? Because society demands it.
Less demand and more patience, compassion, and education is key.
