Oo it's been quiet! We had an absolutely wonderful family trip, took some time to recover, and now I'm back in front of the oven 😊😊

Whole wheat sourdough Cheddar cheese crackers because I'm obsessed with these and my Sourdough needed a feeding after our trip and I cannot just throw out perfectly good starter! These crackers remain amazing and I am perfecting them with every batch 🐠

Sourdough has been on my radar for a while, but it's a bit of a process to make the starter, so I hadn't commited the time yet. (Just like everything else in my life as an anxious person, it wasn't as hard as I thought it would be 🤪)

Well, my brother requested a loaf of Sourdough for next week, so I figured I'd better get it going.

The beginning process of Sourdough is that you need to discard half of the starter everyday, replacing that half with fresh flour and water to feed the yeast as it ferments. I have been reading all the wonderful things you can do with discard, and my family is on a Cheez-it kick, so today, I made Sourdough Cheezits! They are FANTASTIC. I'll put the recipe in the comments :)

My 4 year old is currently obsessed with Sonic. He asked me if I knew how to make Dr Robotniks chocolate chunk cookies. I said.. no. So, we looked it up. It seems to be a chocolate chip shortbread cookie. Easy enough. Thank you, Google.

We got busy mixing ingredients, rolling the dough, cutting them in perfect circles and baking them.

The result was this adorably flat, softly crisp, and not too sweet evil cookie.

And there we have it, the Joyful Ovens very own brand new cookie in the books: Dr. Robotniks Chocolate Chunk Cookie.
