Finally did a popup special this weekend for my long awaited banana pudding cupcake. It's literally banana pudding converted into a cupcake.
The bottom is a baked, crushed Chessman cookie crust with a lightly sweetened banana flavoured cupcake. The filling is a half banana/half vanilla flavored pudding with chopped bananas and crushed chessman cookies. The frosting is a light, airy, whipped vanilla frosting with a hint of banana to really let the cupcake shine. Topped with a Chessman cookie and slice of banana to just tie the whole look together. It was like biting into a taste of heaven when I tried it the first time, but I mean, I can be biased. 😂
