Opera cake is a layered sponge cake that represents the opera house with its beautiful gold accents. This delicious cake is infused with coffee and rum and each layer has a wonderful taste that melts in your mouth. Very easy to make and gorgeous presentation. Definitely a crowd pleaser.

What about it? Nothing because today, after a long sleepless night looking at how much better my work can be, I signed up for !!
I’ve been putting it off not just because I’m already in school full time but simply because I never felt it was the right time. Excuse after excuse. Well we all know, it’s never the right time.
No more excuses. This trip has super motivated me to do better for myself. To work on my potential. No more feeling bad for myself. I’m doing this! Can’t wait to get back home and get started. Im ready for my Don’t believe me? Just watch!

My favorite dessert ever, Creme Bruleeeee!! I can eat this all day. It’s so smooth and rich and soft and sweet and crunchy all at the same time. Yum!
I got these cute ramekins on Amazon because I was tired of always using the regular round ones and I’m glad I did because it levels this custard up. And how cute are these little expresso spoons? ⁣ ⁣⁣⁣⁣⁣⁣⁣

It’s almost Friday and vacation starts tomorrow. These have been the busiest school weeks for me. Going away means I had to triple my work load to get assignment done beforehand. Baking for fun? No problem. Baking recipes I’ve never done before and getting them right on the first try? CHAOTIC and quite messy. But I’m finally done. Just a few photography shots today and kitchen closed! I was excited when I was told I could use my own recipe and not the school one for this assignment. Although I did do the original one first, the serving size was small and I got a paper thin result. I did it again using carnation milk and condensed milk like I usually do and this was the result. Still thin as per the vessel I used but much more presentable! I’m happy with my outcome as I prefer creamy flan versed dense.

Super easy and yummy Brazilian treat, Brigadeiros.
1 pan, 15 minute cook time then roll, chill and add toppings. Simple ingredients are sweet condensed milk, chocolate (100%), salt, butter ans vanilla. I added coconut shreds, cocoa, pecans, walnuts and chocolate jimmies (sprinkles). They’re soft and silky but very sweet so proceed with caution! Bom Proveito!

I survived my first date experience! Sticky Toffee Pudding...

As you all know by now, I have a fear of dates. Use your imagination if you don’t know why. According to a poll I posted in my stories, IM NOT THE ONLY ONE! Dates are by far not the most appealing food but I managed and here are the results. Challenge accepted and conquered!

This sticky pudding (cake of you ask me) is super rich, fluffy and yes, sticky. But this toffee caramel syrup tho! Easy, simple and delicious. Plus, goes great with ice cream! 🤗

Perfect dessert for a tea party. Fluffy Pate a Choux filled with pastry cream and topped with chocolate ganache. Add some Profiteroles stuffed with Chantilly Cream. Does this just not scream beach sand and sea shells? I had a million visions for this plated dessert but I decided to keep it clean and simple. This was a tough one for me. Cake was wonderful; super moist and rich but the almond whipped cream? That was rough. I used up so many cans of coconut milk and on my 4th try, I finally got it fluffy. The aquifaba mousse (chickpea water whipped with white cacao) worked well but quickly deformed with this Florida heat.
Not my favorite school week for sure but good results and tasty too. Needless to say, I will not be specializing in vegan desserts. 🥴

My instructor was curious as to why I used a wine glass with a tooth on it. Well, it’s a combination of my two worlds, Dental & Pastry. This was a beautiful gift from .nathalievera I try not to use it too much to preserve the decal because it’s just too cute! 💚

I’ll take this over apple pie any day. The apples just cook different without that extra layer of dough if you ask me. They were firm yet soft and tender.
I feel with traditional apple pies, the flavor is always on the outside of the apple and it’s the same texture all around the slice. This was way better as you get so many different mouth feels. Yum!

I still can’t get over how beautiful this sushi hack is. I just love the vibrant color pop in the fishes, green onions and masago.
I know I said I wouldn’t do it again but maybe I will and play with the rice to protein ratio for a better balance. It’s just to darn cute!!! I think this is a fun way of making it for sushi friendly kids too.

Seafood Pasta
I had a bag of mussels in the freezer staring at me for over a week. I proceeded to move it to the fridge where it taunted me for two days. I finally gave in and took out some shrimp and scallops too.
This meal took me no longer than 20 minutes! Normally I would just toss them in shallots, garlic, butter and some white wine but I added some heavy cream this time. For seasoning some S&P, cayenne pepper, a few chili flakes and OH MY GOSH! I could not stop licking my fingers. What creamy goodness.
I seriously don’t know what made me put cream in it as I don’t regularly consume dairy (just use it for baking) but I’m so glad I did. It made it so much more rich and savory. Yes it was a heavy plate and I’ll probably will not do this for a very long time but it’s good to switch it up every once in a while.
Do you take a cooking risk every now and then? Not always successful but worth the risk!

Black Forrest Cake
What do you do when cherries are out of season? I went cherry picking; in a freezer bag! Yes, I bought a Season’s Choice 6 pound bag of frozen Cherry Berry Blend from and picked out all the cherries. They were plump and delicious.
This Viennese cake was super moist, infused in coffee and cherry liquor. Filled with cherry compote, covered in chocolate mousse and topped with cream Chantilly and cherries. I made the chocolate bark by rolling tempered chocolate on parchment paper and letting set, then unrolling into shards. The cherries on top are maraschino cherries with stems but I dipped them in red chocolate for presentation. All together this was not just pretty, but a great flavor combination.
Although it’s a traditional part of this cake, you can skip the mousse part and cover it in cream chantilly (whipped cream). This makes it as easy as boxed cake! Also, use buttermilk for best results.

I have been looking forward to making a pavlova for months now. When I finally did it, it was fail after fail. All the recipes I found lacked the most important detail: DO NOT REMOVE FROM OVEN TILL COOLED AT LEAST AN HOUR! 🥴
This little one here was actually made in my toaster oven and I left it in there because I didn’t care for it much. To my surprise, it came out perfect. I will try again with a full sized one soon. These are just too pretty and delicious to give up on.

Puffed up and filled with cream chantilly and sprinkled sugar or engorged with pastry cream and a chocolate ganache top for a wonderful melt in your mouth eclair.

We don’t have snow here in Florida but we do have coconut macaroons! I’m a big coconut fan. I love the sweet chewy goodness although I have a little and I’m good (not the biggest sweet tooth). But I enjoy making these because you can add so many additions to change flavors. The toastier the better i say!
