I haven’t done a cake in a while, but really enjoyed this 92nd birthday cake I made for a friend ❤️.

Someone recently asked me why I’m not doing cakes anymore and I laughed this morning at the question as I tried to work on this cake. Caroline was running through the house pulling a blanket behind her (with the cat on it, mind you), yelling “CHOOOOOO CHOOOOOOOOO!” at the top of her lungs. And that, friends, is why. 🤣 🚂 🤣 I miss all my sweet customers!

I’ve seen some posts for super complicated Easter cakes... if you’re like me, we are keeping things simple! Here’s a super-simple, but pretty cute cake I did this morning.

1- Make your cake. I made a devils food cake. Let it cool completely. Make your buttercream. I use a simple, but delicious recipe. 2 sticks salted butter, 8 tsp water, 1 pound of confectioners sugar. 1 tsp vanilla is optional, but I usually leave it out. My cake is pretty small, but if you’re making a normal-sized cake, you’ll probably need to double your buttercream. If you have some left, we like to make dip for pretzels with it!

2- Ice the cake. Doesn’t have to be perfect! Outline your bunny or whatever you’d like to have on your cake using a toothpick. Separate your remaining buttercream and make as many colors as you’d like. I did four colors for the bunny, plus one more for grass. You can use any tips you have. For variety, I used 12, 21, 233, 18, and 2D (all Wilton tips).

3- Start filling your bunny in. Space out the colors and sizes and have fun! Add grass (tip 233) wherever you’d like and add candy jelly beans or whatever you have on hand. Hope this inspires you to do something simple but fun with your kiddos!

We decided to make easy, no-chill sugar cookies today since it’s so dreary outside. We will let you know how they turn out. We used this recipe: https://www.sidechef.com/recipes/6620/the_perfect_sugar_cookies/ but note I had to add an extra egg. We rolled them out so that they are thick and will be chewy. I have a good cheater recipe for cookie icing I will share in a bit because royal icing is typically hard to use... and nobody has time for that mess! PS-those are suckers, not ci******es. 😂😜

I was thinking about doing a little cupcake decorating with the boys and wondered if there would be any interest in a few beginners tips on cupcake decorating for those at home with kids all day every day till who-knows-when. I probably wouldn’t do a videoed class, but would post step-by-step pictures if there’s interest. To start, all you’d need would be baked cupcakes, butter and confectioners sugar, food coloring, piping bags (or ziplocks), and a few of the typical Wilton tips.

I’m not upset at all that Josiah requested a Reece’s cake for his birthday!  ❤️😁
