No fancy pictures today but an order of GLUTEN FREE chocolate chocolate mini cupcakes, an box of chocolate peanut butter, chocolate vanilla, chocolate raspberry, and vanilla chocolate, and some raspberry lemon! The assorted box was just leftovers of some of the gluten free minis I had leftover and a couple regular vanilla

Tried a new flavor today! If you’re a chocolate hazelnut fan these are for you! I want to make some tweaks but I’m extremely happy with these as a first try.

So I’ve been on a mission lately to find a frosting that I really love. I’m not a huge “super sweet” fan. I think over the years my love of unsweetened tea and extremely dark chocolate has gotten in the way of that. I was always a little hesitant to try to make a Swiss meringue buttercream. I ended up making a Swiss meringue (not buttercream) for my first batch of s’more’s cupcakes and it was very, very good but I didn’t add the buttercream portion so it was more like a marshmallow. But it’s not what I wanted for an ACTUAL buttercream frosting. I’ve played with ratios time and time again for a regular American buttercream but it is always just too sweet.

Today I finally decided to try a real Swiss meringue buttercream. It. Is. The. Best. Frosting! It’s only subtly sweet (I probably could add even less sugar if it was just to please myself but I know most people like things much more sweet!) and so creamy and smooth.

I’m definitely going to be offering it as a frosting choice for anyone’s cupcakes! If you like a less sweet taste, it’s the buttercream for you.

Wow so it’s been a little while (about two months?!) since I posted anything! I had to take a hiatus in order to get the house together and now I’m back… and to celebrate, here’s a recent pic of an order of my number one best seller SALTED CARAMEL! They’re so so good!

I had a lot of firsts for this order! To start, these chocolate cupcakes are GLUTEN FREE! I will be happy to accommodate any gluten allergy needs in the future as these turned out better than I could have imagined.

The second dozen were (probably obviously) carrot cake with a cream cheese frosting. I have never made, nor liked, carrot cake but these were pretty dang good.

I’m excited to continue trying more flavors and expanding the menu (though pretty much all special requests can be accommodated 😉). What should I try next?
