Who needs a quick and easy dessert to bring for Christmas???
Here's what you need 👇

Cinnamon fudge:
4 cups white chocolate chips
14oz sweetened condensed milk
Tbsp cinnamon
1/2 cup sugar
1/4 cup maple syrup
1. Line a 8x10 baking dish.

2. Put chocolate, syrup, and milk into a pot and put on medium low heat. Stir constantly until smooth. Take off of heat and poor into the lined baking dish.

3. Mix together your sugar and cinnamon in a bowl and then top with the cinnamon sugar mixture. Swirl in the line pan and then chill for 2-3 hours. Enjoy!!

Cookies and cream fudge.

Ingredients:

6 oreos
Vanilla extract
4 cups white chocolate
14oz sweetened condensed milk

Instructions:

1. Line a 8x10 baking dish

2. Crush your 6 oreos

3. Heat the chocolate and milk on low heat until smooth. Add in a splash of vanilla and mix.

4. Pour into the baking dish and mix in your oreos. Save some to top with and Enjoy!!

So, I havent posted in a while but this has been my new hyper fixation. Making syrups for my iced coffee. This is Honey Teddy Graham. Here's what you need 👇

Ingredients:
2 Tbsp Instant espresso
Tbsp heavy cream
Your choice of milk

Syrup:
1 cup brown sugar
Tbsp ground cinnamon
1 cup honey
Tbsp vanilla extract

Instructions:

1. In a small pot, add all the syrup ingredients except for the vanilla. Set on medium heat and bring to a boil. All ingredients should be dissolved by now. Remove from the heat and add your vanilla.

2. Once the syrup is cooled, add to a mason jar. (Thats all I had to store it)

3. In plastic cups, add 2 tbsp of the syrup. Fill the cup up with ice (I used crushed ice) and then add your choice of milk until the cup is filled about 3/4

4. In another cup, add your espresso and 1/3 cup of hot water. Mix to combine and pour into your cup. Take a spoon and mix the drink. Mix from the bottom to evenly combine the ingredients.

5. Rinse the cup you made the espresso in and add a Tbsp of your syrup and 2 Tbsp of heavy cream. Froth the mixture for 2-3 minutes. Pour on top of the coffee and sprinkle a bit of cinnamon on the cold foam if you'd like! Enjoy!!

I am slowly realizing how much I've underestimated buying chicken in bulk and taking the time to trim, butterfly, tenderize, marinate, and freeze for future meals. Here's an easy starter marinade for you guys. Chicken fajita. Here's what you need 👇

Ingredients:

1-2 chicken breasts. This depends on how many people you feed at one time.
1 Tbsp smoked paprika. Regular works too
1 Tbsp garlic powder
1 Tbsp onion powder
1 Tsp oregano
1 Tsp salt
1 Tsp pepper
1 Tbsp ground cumin
1 Tbsp Chili powder
2 limes
1/4 olive oil
2 Tbsp minced garlic
1 gallon sized ziploc bag

Directions:

1. Trim your chicken and butterfly the chicken. Once that is done, place clear plastic wrap over the chicken and tenderize evenly so that the chicken cooks evenly. Place in your ziploc bag

2. Mix all of your seasonings, oil, and the juice of the two limes in a bowl. Do a quick taste test. You can add cayenne pepper if your prefer spicy 🔥🔥🔥.

3. Add the mixture to your bag and mix well! Make sure all of your chicken is coated. Leave in the fridge to marinate for dinners or meal prep. Freeze to eat at a later date! Make sure you squeeze the air out to store easier in your freezer.

Side notes: If you want to go the extra mile, I would add red onion and a jalapeño, chopped, to the bag. I just usually have the seasonings on hand and I am trying to keep it quick and easy! Enjoy!

Street corn pasta. Here's what you need 👇

Ingredients:

1 box rotini pasta
1lb ground beef
I can corn drained
1/2 cup cream cheese
1/2 cup sour cream
3/4 cup milk
Red onion minced
1 jalapeño chopped
Garlic powder
Onion powder
Ranch seasoning packet
Smoked paprika
Chili powder
Ground cumin
Lime juice
Tajin
Cotija cheese
Fresh parsley

Directions:

1. Start by boiling water for your pasta. In a pan, add oil and get hot. Add your corn, jalapeño, and onion. Sear until corn is almost roasted. Add garlic powder, salt, pepper, lime juice, and tajin into the pan. Remove from heat and set aside.

2. In a sperate pan, add your beef and cook. Once its almost cooked through, add your onion powder, paprika, salt, pepper, garlic powder, smoked paprika.

3. Add your vegetables into your meat and cook for about a minute. Add your cream cheese, milk, and sour cream. Mix until creamy.

4. Add your pasta into the sauce and mix until combined. Serve and add chopped parsley and cotija cheese.

Lemon brownies!!! Here's what you need 👇

Ingredients:
1 cup granulated sugar
Zest of 2 lemons
1/2 cup butter
2 eggs
Tsp vanilla
Tsp lemon extract
1 cup AP flour
1/2 tsp salt
1/4 baking powder

Icing:
2 Tbsp lemon juice
2 tsp vanilla
Pinch of salt
1 cup powdered sugar

Instructions

1. Preheat your oven to 350°F and line an 8x8 baking dish. In a large, microwavable bowl, add your sugar and lemon zest. Rub the lemon zest in between your fingers to help release the lemon oils. Add the butter and microwave until the butter melts and the mixture is hot. About 1 minutes. Stir with a whisk.

2. Add your eggs, vanilla, and lemon extract and whisk vigorously for about 30 seconds until the mixture shines.

3. Mix your salt, baking soda, and flour in a seperate bowl.

4. Add the dry ingredients in with the wet and fold them gently with a spatula until the mixture doesn't have anymore white streaks.

5. Bake for about 20-25 minutes. The center should be a little gooey and its done. It will continue to bake outside of the oven.

6. While the brownies bake, add all of you Icing ingredients together and whisk. Add more salt to decrease the sweetness if needed. Add the icing on when the brownies are completely cooled. Enjoy!!

I've been struggling to find some inspiriration to make new content so I've slightly tweaked my banana cupcakes recipe. I've added some cinnamon sugar and chopped pecans on top.

Here is a higher protein refresher drink. Here's what you need 👇

Ingredients:

1 cup Coconut water
Zero sugar lemonade mix. I used blackberry lemonade from Walmart
1/3 cup frozen mixed berries
1.5 cups fat free fairlife milk
1 scoop of vanilla protein or vanilla shake will do instead of the milk and powder.
A pinch of salt to kill the sweetness.
Optional: I add my creatine and collagen powder.

Directions.

1. Add the water, lemonade mix, and salt into a shaker container. Mix well and pour over you ice and mixed berries.

2. In the same shaker container, add your milk and protein powder and mix well. Pour over the lemonade and stir with a straw. Add more salt if it is too sweet. Enjoy!

Added notes: I added my creatine and collagen powder in with the lemonade mixing process. This is great along side a smaller breakfast or if you are just looking to add more protein to your diet!

Big Mac Burger bowls. Here's what you need 👇

Ingredients:

1lb ground beef
2 medium yellow potatoes (what i had)
Cheese slices of choice
Lettuce
Pickles
Sesame seeds
Minced garlic

Burger sauce:

1/2 cup ketchup
1/2 cup mayo
1/4 cup mustard
1tbsp vinegar
1 tbsp relish

Instructions:

1. Start by dicing your potatoes in equal bite sized squares. Add them to a bowl with some oil and seasonings on preference. Add them to your air fryer at 400F° for 20 minutes. Flip around after 10 minutes.

2. Add some minced garlic to a hot pan and Sautee for about 2 minutes. Add your beef and seasonings with garlic, onion, salt, pepper, and paprika. When the meat has been browned half way through, add 2 Tbsp of worsteshire sauce.

3. Once the meat is cooked all the way through, add your cheese slices on top and let melt.

4. On a plate, add your potatoes, Lettuce, meat and cheese, and the burger sauce. I added my Pickles to the side. Top with sesame seeds and enjoy!

Ok everyone, we were only one like away from my goal but here is what you need for my snickerdoodle banana cupcakes 👇

Ingredients:

3 ripe bananas
1/3 cup melted butter
Tsp vanilla
1/2 tsp maple extract
1 egg
Tsp baking soda
1/2 granulated sugar
1/2 brown sugar
1 cup AP flour
Tsp cream of tartar
Tsp cinnamon

Cinnamon sugar:

2 Tbsp granulated sugar
1/tsp cinnamon

Directions:

1. Start by preheating your oven to 350F°. Grab a muffin tin or a bread loaf pan. This recipe can be made into bread or cupcakes.

2. Melt your butter. While the butter is melting, mash your 3 bananas really well. Add your butter to the bananas and mix. Add vanilla, egg, and maple to the bowl and mix again.

3. In a seperate bowl, add all dry ingredients and mix together.

4. Combine the dry ingredients and wet ingredients together. Add your mixture to your bread pan or muffin tins. In the bread pan, pour 2/3 of the mixture and then add a layer or the cinnamon sugar to it. Then add the rest of the mixture on top and topped again with cinnamon sugar. In the muffin tin, add half of the mixture to your muffin tin, add cinnamon sugar, and then add the rest of your mixture on top and then top with more cinnamon sugar.

5. The bread pan will bake for about 45-50 minutes. Muffins are 20-25 minutes. The way to see if they are done is taking a knife or toothpick and stick it into the middle. It should come out with some crumbs on it. Pull it out and let rest for at least 10-15 minutes. This is essential to the cooking process! Enjoy guys!

Who here loves homemade granola? I sure do and here's how I make it. Here's what you need👇

Ingredients:
2 tsp vanilla extract
1/3 cup coconut oil
1/3 honey or maple syrup
2 Tbsp brown sugar ( i used swerve, a brown sugar substitute)
3 cups old fashioned oats
Salt
Your favorite nut. I used roasted pumpkin seeds
Dried fruit. I used dried cranberries.
1 Tbsp Apple pie spice

Instructions:

1. Start by preheating the oven to 275°F.

2. In a small sauce pot, add your coconut oil, honey, vanilla and brown sugar. On medium heat, stir the mixture until they are melted and the sugar has dissolved.

3. In a large bowl, combine oats, salt, nuts, apple pie spice, and dried fruit. Mix until fully combined.

4. Add the wet ingredients into the bowl and mix and cover well.

5. On a large baking sheet, add parchment paper and spread the oats mixture evenly. Bake for 15 minutes and pull the oats out and mix. Make sure the oats are evenly distributed ever time you mix. You will do this 4 times for an hour total.

6. Let cool for about an hour and jar. Enjoy!
