Let’s take a quick trip down memory lane...

Check out this photo from the 2018 Oshkosh Farmers Market. Back then, Trent was still working full-time in construction over in Green Lake. He’d pull all-nighters every single Friday just to have fresh baked goods ready for Saturday morning. Believe it or not, Lizz wasn't even convinced that opening a bakery was a good idea yet! But the moment Trent’s sourdough bread hit the shelves, we knew that we were building something special.

Fast forward to today! The summer sun is out, and outdoor market season is officially here! Today marks the Opening Day for the Oshkosh Farmers Markets. The Thunderbird Bakery team is back on Main Street, fully stocked and ready to kick off the summer right.

In addition to our setup in Oshkosh, we are also back at the Downtown Fond du Lac Farmers Market this morning.

Market Details for Today:

Oshkosh Farmers Market: 8:00 AM - 12:30 PM

Fond du Lac Farmers Market: 8:00 AM - 12:00 PM

Future Neenah Farmers Market: Later in June!

The one that started it all is back.

For everyone who has been asking, our famous Millionaire Shortbread is officially back in the seasonal rotation.

This favorite features a buttery shortbread base layered with our rich, housemade butterscotch and topped with chocolate ganache.

Our shortbread flavors rotate seasonally, so this crowd-pleaser will only be around for a limited time. Come grab the classic that laid the foundation.

We are hiring a full-time Bread Mixer to join the team at Thunderbird Bakery.

This role is the steam engine of our bread department. It is an early morning, highly active, and deeply physical position that keeps our entire sourdough production moving. If you love the craft of baking, thrive in a hands-on environment, and do not mind a workout that involves lifting up to 50 lbs, we want to hear from you.

Shifts are Tuesday through Friday from 4:00 AM to Noon. Health insurance benefits available after 60 days.

The farmers markets are almost in full swing, and we need a few more hands on deck to make the magic happen on Saturdays.

Whether you’re an early bird who loves the behind-the-scenes prep or a people-person who wants to hang out at the Oshkosh, Neenah, or Fond Du Lac markets, we’ve got a spot for you.

What we need:
Kitchen Prep/Packing: 5:00 AM start time (at our kitchen).
Market Sales: 7:00 AM start time (meet us at Oshkosh, Neenah, or FDL markets).

The Details:
Saturday mornings
$15–$18/hour based on experience

Something new just hit the menu ... Meet the homemade Raspberry Sweet Cream Cold Brew. This slow steeped 24 hour blend of Ruby's Portage beans, combined with fresh raspberry and velvety sweet cream is the perfect start to your day.

The cheesecake latte is currently trending, and our team has developed a unique version for our menu.

We craft the syrup in-house using actual cream cheese, heavy cream, and a touch of almond extract. This blend is specifically designed to complement our other house-made syrups.

While it is excellent hot, we recommend trying it iced.

We are transitioning our menu for spring and making use of the very last of our premium Michigan blueberry reserve.

Sandy has simmered these summer berries into a thick jam for our brand new blueberry rolls. Topped with a bright lemon icing, they are a fresh alternative to our seasonal orange rolls.

These are available in limited quantities for the next few weeks, while supplies last!

We wanted to take a moment to share our gratitude with everyone who joined us for Syrian Night.

The evening was filled with an incredible amount of love and support from our community. We walked away with several valuable lessons learned that will help us grow, but more importantly, we left feeling inspired by the connections made.
