Old time methods, high quality unique ingredients, and time are used to make products that are a unique experience. I grew up baking in our family owned bakery, and have enjoyed baking ever since. Hey all I made sourdough 60 % fresh milled whole wheat sandwich loaves, rounds, and oblongs . The whole wheat is the ancient wheat organic spelt and I milled it myself as usual. The flavor this grain brings to bread is simply amazing. I currently have 2 sandwich loaves for 8$ each, and 1 round 10$. Message me if interested. Pick up between 4 and 5 PM. I will bake 6 more tomorrow, and again Tuesday if they keep selling out. 60% freshly milled whole grain flour half spelt/half hard red wheat, 40%bread flour, water, salt, tallow to grease the pan. Baked today. I made 6 larger sourdough loaves (4 left) and 3 in sandwich pans (0 left) for that shape. The are all 60% fresh milled organic flour from the ancient wheat grain Spelt. Just 3 ingredients, flour water, salt. Spelt brings tons of flavor and fresh milled whole grain nutrition. The sandwich loaves are intentionally kept on the smaller side because with a sourdough method and fresh milled ancient grain the gluten structure would not support going up above the pan height and crowing. 10 dollars for the larger loaves, 8 for the smaller ones. Baked today. The picture doesn't do the bread justice. I made sandwich loaves, 3 rye sourdough, and 3 spelt sourdough. These have all been sold now. All of them are 60% whole grain flour milled right here fresh. The sandwich loaf is a combined sourdough and brewers yeast method with modern wheat so it will have complex flavor.

Baking was fun today. This is sourdough made from 60% fresh milled khorasan an ancient wheat variety. These are all sold. Khorasan is interesting. It is yellowish in color, buttery, and nutty. This bread was 2 days in the making from starter expansion to baking. Good bread needs old dough! My house smells amazing. Have a great Sunday!!

Baked today. Pickup between 4:30 and 5:30. Message me if interested. I have 4 sandwich loaves available. I did 2 as a butter top and 2 regular. They are 70% fresh milled whole wheat and partial sourdough leavened for 24 hours for flavor. 8$ each, cash only please

I also have 4 sourdough loaves. The two 100 % Spelt are spoken for. In each picture the one on the right is 100% fresh milled whole grain spelt. This might be as close as you can get to some Old Testament biblical bread. Spelt has been cultivated since approximately 5000 BC. The loaves on the left picture are 60/40 spelt/Bread flour. Same weight, same formula so you can see the 100% spelt will be more dense. Either will taste amazing 🙂 10$ each cash only please. Enjoy!!

4 loaves of sourdough made from 60% organic fresh milled whole grain spelt (ancient wheat variety), 40% bread flour.

6 sandwich loaves that are a slight variation from the last time. The changes of avocado oil and some spelt made the dough harder to work with and not quite as pretty of a loaf, but should keep the bread soft longer and add some different flavors. The fresh milled organic whole grains are 30% spelt, 20% hard red wheat. 50% bread flour. 40% of the flour was fermented for a day with my sourdough starter for flavor development as before. Switched to avocado oil from butter. There is no added sugar, no seed oils.

These are made from 50% organic fresh milled whole grain hard red wheat and 50% bread flour. 40% of the flour was fermented for 20 hours with my sourdough starter for flavor development. I simply love the baking methods that are long gone for products you can buy in a store today. Growing up baking with my dad he always used to say "good bread needs old dough". Modern commercial and retail bakeries substitute the time it takes to do this with additives to try to replicate the chemistry. In many ways I get it. This takes time and time is money. You will see things like vinegar, citric acid, "dough enhancer", etc in bread at the store. Here you see my prepping this morning to make bread tomorrow. It is nearly half of the flour for the formula I'm baking tomorrow morning and the yeast will get about 20 hours to work its magic with this flour before I add the rest of the ingredients and mix it. A significant amount of that time the mixture will be chilled to stress the microbes so they make a bunch of amazing flavors. No additives required, and if all goes as planned it should be some great bread. Fingers crossed. Knead on!!
