We’re still trying to process last night 🥹

We sold out in just 30 minutes, making it the fastest sellout we’ve ever had at Audubon Park Community Market

To everyone who stood in line in the crazy Florida heat, waited patiently for pastries, and chose to support our little Swedish bakery on a busy Monday night, tack så mycket. Truly. Seeing that line from open until we sold out was overwhelming in the best possible way.

We also want to say we never intend to run out that quickly. As the only baker, I’m constantly trying to predict how much to bring each week, and every Monday is a little different. We’re already planning to bring more next week and hope to have enough pastries for more of you. Thank you for being patient with us 🖤

And a very special thank you to our friend and loyal customer Linda, who noticed how nonstop everything was and quietly surprised me with a beautiful bouquet from Zenn Naturals 💐 It was such a kind moment in the middle of it all, and it meant so much. This is what community is, thank you for letting us be part of it 🥰

We’re bringing a full spread of Swedish pastries to Audubon Park Community Market this Monday 🇸🇪

Cozy, buttery, cardamom filled favorites all baked fresh for the market and meant to be slowly savored with sticky fingers 😋

Everything is made by hand in small batches, and once it’s gone, it’s gone! If you’ve been craving something warm, spiced, and a little bit different from your usual bakery stop, this is your sign 🖤

It’s time for a little vulnerability.

My goal with Scandi Bakery was never for it to just be a product. I didn’t want to simply monetize my passion or hide behind the bakes. This bakery is a continuation of a family legacy that began long before I existed; something I carry with care, honesty, and heart.

But it’s easy to get caught up in the busyness of markets, the summer heat, the constant movement, and lose sight of why we’re really here.

And the truth is, we’ve been carrying a lot.

As many of you know, I live with endometriosis. Around 30–50% of women with this condition experience infertility, and I am one of them. It has been one of the most painful and light dimming experiences of my life. Some days I feel grounded and like myself. Other days, I need community more than I can put into words.

Last night was one of those nights.

When it rains here in Florida, markets slow down. Fewer lines, fewer familiar faces, more quiet. And for someone who’s been running on “go mode,” that stillness can bring on a wave of anxiety you don’t really want to sit with alone.

So let this be your reminder: at Scandi, we don’t want anyone to sit alone in that feeling.

Our motto has always been: “No matter who you are, or where you’re from, there’s a seat at our table and a fresh fika treat waiting for you.”

If you need a moment of calm, we’re here.
If you need a hug from a stranger, we’re here.
If you just need someone to sit beside you for a minute, we’re here.

This is what community is meant to be.

Thank you to Audubon Park Community Market for always being a place that provides that. To my dear friend Mystic Tart for taking the time out of her night to carry some of that weight with me. To Zenn Naturals for helping my husband surprise me with what might be the most beautiful bouquet I’ve ever received. And thank you to everyone who showed up in the rain and supported us anyway.

We don’t talk enough. We don’t share enough. But we’re here to help with that 🖤

Some flavors just belong together, and almond and orange is one of them 🤌🍊

Our Nordic Almond Citrus Kringla starts with a warmly spiced dough, twisted into the traditional Swedish kringla shape 🥨 filled with sweet orange almond paste, and topped with toasted almonds for the perfect nutty crunch 😋

If you’re an almond croissant type of person, this one’s for you.

This weekend left us a little speechless.

On Saturday at East End Market, you sold us out in just 1 hour. Then on Monday night at Audubon Park Community Market, you did it again in 1 hour and 45 minutes 🥹

Every market comes with a few nerves. No matter how many we’ve done, there’s always that fear that no one will show up. From the alarm that goes off before the sun is out, fresh buns coming out of the oven, to setting up the canopy, anxieties are high. But every time, those nerves are quickly calmed by familiar faces returning for their favorite buns and excited new faces discovering us for the first time, eager to support our little bakery 🤎

We’re incredibly grateful for every person who stopped by, shared a kind word, brought a friend, or waited in line for a pastry. Moments like these remind us why we do this.

POV: You made it to the market before the Cardamom Buns sold out 🥳

Scandi Bakery is just the two of us; a husband and wife team sharing a little piece of Sweden through fresh baked fika. Every bun is made from scratch, hand twisted, and baked in small batches using the traditions and flavors we grew up with.

If you’ve never tried a Swedish Cardamom Bun before, this is your sign. We’ll be at East End Market this Saturday from 11am–3pm but come early because our most popular buns have a habit of disappearing fast 🤎

Thank you to everyone who stopped by last night despite the rain. Seeing familiar faces at the tent always makes the long baking days worth it 👩‍🍳

Our Dark Chocolate Espresso Scrolls sold out in just 15 minutes, so we’ll be bringing more next week 😋 If you’ve had your eye on one, come early!

Everything is baked fresh right before our markets, and rain or shine, we’ll keep showing up with trays full of Swedish pastries 🤎

Introducing our Dark Chocolate Espresso Scroll 😍

A dark chocolate cinnamon dough, swirled with a mocha brown sugar filling and finished with a freshly brewed espresso glaze ☕️🍫

Rich, chocolatey, and just the right amount of coffee, this might be one of our favorite buns we’ve ever created. The perfect pick-me-up and we’re only bringing a limited number to the markets, so be sure to stop by early if you want to grab one!

Some days it still feels surreal that this is our life.

A little idea turned into early mornings, flour covered clothes, heavy market tents, late night baking shifts, sold out trays, and a business we’ve built side by side.

I’m grateful for the dream, but even more grateful for the person I get to build it with. Scandi wouldn’t exist if it weren’t for us being an awesome team (shoutout to the actual best husband ever) 🤎

We sold out at Audubon Park Community Market in about an hour and a half on Monday; every single bun gone 🥺

We’re honestly so grateful for everyone who shows up for us every Monday night, waits in line, brings a friend, and keeps coming back. Thank you for taking the time out of your week to hang out in our little corner of the market.

If you’re planning to come next week, come early. Once they’re gone, they’re gone.
