Introducing our Dark Chocolate Espresso Scroll 😍

A dark chocolate cinnamon dough, swirled with a mocha brown sugar filling and finished with a freshly brewed espresso glaze ☕️🍫

Rich, chocolatey, and just the right amount of coffee, this might be one of our favorite buns we’ve ever created. The perfect pick-me-up and we’re only bringing a limited number to the markets, so be sure to stop by early if you want to grab one!

Some days it still feels surreal that this is our life.

A little idea turned into early mornings, flour covered clothes, heavy market tents, late night baking shifts, sold out trays, and a business we’ve built side by side.

I’m grateful for the dream, but even more grateful for the person I get to build it with. Scandi wouldn’t exist if it weren’t for us being an awesome team (shoutout to the actual best husband ever) 🤎

We’re honestly so grateful for everyone who shows up for us every Monday night, waits in line, brings a friend, and keeps coming back. Thank you for taking the time out of your week to hang out in our little corner of the market.

Let this be your sign to always bet on yourself 🖤

Late last year, I sent the email and left my full time job to pursue my bakery.

That decision had been sitting heavy on my heart for a long time. I was trying to juggle both worlds at once. Waking up early to bake, spending long days at work, then coming home just to do it all over again. And while I was grateful for my job…there’s a different kind of exhaustion that comes from knowing exactly what you’re passionate about and feeling too afraid to fully go after it.

Every day I sat at that desk, watching opportunities pass by because I didn’t have the time or energy to say yes to them, felt like I was slowly betraying myself and the dream I had worked so hard to build.

Holding myself back from taking that leap of faith meant holding my bakery back too. So eventually, I decided to trust myself enough to jump.

Since going full time with our bakery, we’ve been featured in 4 newspaper articles, appeared on live television, built a place for ourselves within our market community, and quadrupled our sales. But more importantly than any of that… I can finally say that I’m happy.

Truly, deeply happy.

There have still been hard days, stressful days, and moments where I’ve questioned everything. But even on those days, I’ve never once regretted choosing this life.

To everyone who has stood in line at our tent, shared a post, bought a pastry, told a friend about us, or supported this dream in any way; thank you. You’ve changed our lives more than you know, and I carry that gratitude with me every single day. 🖤

A busy past couple markets, with a line starting before we even opened on Saturday!

The kitchen smelled like cinnamon and cardamom long before sunrise, and somehow by mid morning it was all gone. Trays emptying faster than we could restock them and a full sell out within the hour. Thank you to those who braved the Florida heat and showed up for our little bakery 🖤

Wild Blueberry Cinnamon Butter Muffins 🫐🤤

I have no other way to say this; these are the best Blueberry Muffins you will ever have. Don’t believe me? I dare you to try 🤷‍♀️

Incredibly moist and bordering on the softness of a cupcake (who says muffins have to be dry?? 🙄), filled with fresh wild blueberries that pop in your mouth upon each bite 🫐 We’ve got spices in the batter AND the streusel (of course), finished with a brown butter cinnamon glaze and a sprinkling of sea salt 😋

Truth be told, this recipe has a much deeper meaning than just being delicious. 4 years ago, Seaborn lost his Nana to cancer. To have known this incredible woman, was something so truly special. I remember the first time meeting her, “Call me Nana.” she said with a warm hug. From that moment on, there wasn’t a day I didn’t feel like another one of her grandchildren. Welcomed, unconditionally loved, spoiled.

When she was in the hospital, she struggled with her appetite. Knowing there wasn’t a thing I had made her that she didn’t like, I rushed to the kitchen to make her Blueberry Muffins. Not too sweet, filled with nutritious fruit. It was a success!! I’ll never forget the relief we felt knowing she had finally eaten something (almost an entire batch!).

It was her birthday this week, on top of Mother’s Day coming up, we thought this was the perfect way to remember her. Through her contagious joy, southern sass, and heart of gold, she left a lasting impact on my heart 🖤

Thank you to everyone who came out last night to welcome us back home. Despite a bit of jet lag, the excitement of being back and getting to bring our pastries to you all again kept us going!

We couldn’t do this without the people who take the time out of their day to show up and support our little bakery. Because of you, Scandi had the chance to make it out of the kitchen and into our community. A dream I never thought was truly possible. From the bottom of our hearts, thank you 🖤

We had a special Strawberry Lemon Crumb Cake for the night; a moist coffee cake base, homemade sweet strawberry jam, topped with a spiced streusel, and drizzled with a tart lemon icing 🍋🍓 If you got to try it, we hope you enjoyed it! If not, what are you hoping we bake next? 👀

Twisted, golden, and fresh from the oven; these are the buns that built our bakery 🖤

Our Swedish Cinnamon Buns are soft, twisted layers of dough filled with warm cinnamon and just enough sweetness, finished the traditional way with crunchy Swedish pearl sugar.

The Brown Sugar Cardamom Buns are a little deeper; rich, aromatic, and full of that cozy, spiced flavor Scandinavia is known for 😋

Saturday at East End Market felt like spring has finally arrived in Orlando 🌼💐 warm sunshine, flowers starting to show off again, and so many new faces we don’t usually get to see on Mondays who have been waiting to finally try our Swedish pastries 🥹

And then Monday night at Audubon Park Community Market; filled with vendors and farmers, incredible live music, and that familiar feeling of community that makes it all feel like more than just a market.

Thank you to everyone who came out and for selling us out yet again. Whether it was your first time or your regular weekly stop, we feel so lucky to have been part of your week 🖤

My favorite part of owning this little Swedish bakery is being able to think up treats like these and then watch them come to life 🖤🇸🇪

The process of making our homemade lemon sugar and lemon juice glaze to add to our new seasonal bun; Lemon Poppyseed Cardamom Knot 🍋

This bun is absolutely filled with aromatic cardamom and fresh tart lemon. With this transitional Spring weather we’ve been having in Florida, I think this is the pick me up we need 😋

Only around for a little while, and baked in small batches for each market so get it while you can.

Sometimes I can’t be at the market because of an endometriosis flare, and last night it was just my wonderful husband, quietly holding everything together as the rock of our little bakery 🖤

Rain or shine, we always push through to bring you the best Swedish treats. Even with puddles underfoot and gray skies above, there’s something special about sharing fresh pastries and knowing that each bun carries a bit of warmth and care. 🚨We were recently featured in the Community Paper Orlando 🚨🥹

They shared a bit about how Scandi Bakery came to be; from missing Scandinavian culture after moving to Florida, to building a Swedish bakery that brings those traditions (and flavors like cardamom and lingonberry) into our own little corner here in Orlando 🇸🇪

They also touched on the idea of fika and why slowing down for a treat and connection over rushing is something we take seriously 🖤

We went into last night’s market watching the sky, expecting a storm… and instead, just a soft sprinkle and a rainbow right over our booth 🌈

Seaborn and I are Scandinavian through and through, but on our mom’s side, we’re both Irish as well! My great grandmother came through Ellis Island from Ireland, so we’ve got Irish blood that makes this holiday feel a little extra special to us. We’re calling that rainbow a bit of luck from our roots 🍀

Thank you to everyone who still came out, supported us, and made it such a special night despite the forecast. It meant more than you know.

Two markets, trays of Swedish buns, and a weekend spent sharing a bit of Scandinavia with our Orlando community 🇸🇪

Our favorite moments are the simple ones; someone trying their very first Swedish bun, someone returning for their favorite pastry, moments to slow down and have a chat across the table.

That’s the heart of this little bakery for us 👩‍🍳👨‍🍳

Getting to share what we make. The flavors we grew up with. The traditions tied to our family and heritage. And using it all as a way to connect with the community around us.
