Customer story | 19 Hours Later… His Best Brisket Ever.

Christopher Rogalski put in the time, and the result speaks for itself.

About 19 hours all in, starting low at 180°F and eventually bringing it up to 225°F. He pulled the brisket at 203°F internal, wrapped it, rested it for a couple of hours, and ended up with what he called his best brisket ever.
