Crab cakes with prosciutto wrapped asparagus. Yum yum yum!

Crab Cakes

Pre heat oven to 375

Mix 1/2 cup mayo, 1 slightly beaten egg, 1 tablespoon Dijon,1 tablespoon Worcestershire sauce, 1 teaspoon old bay seasoning, and a couple spoonfuls of breadcrumbs.

Gently fold in 1 lb jumbo lump crab.

Cover a sheet pan with parchment paper and make 6-8 crab lumps. There is not much binder here but they will stay together when baked.

Bake 15-18 minutes.

Serve with a sprinkle of chives and your favorite sauce for dipping.

Tonight’s dinner was a delicious one pan plan at Harris and Herb

Sheet pan sausage and vegetables

Hot Italian sausage links, sliced
Broccoli crowns
Fingerling potatoes, halved
Butternut squash, cubed
Sweet onion, large dice
Garlic infused olive oil
Italian seasoning
Crushed red pepper flakes
Fresh chopped rosemary and oregano
Salt and pepper
Fresh chopped parsley and chives

Preheat oven to 400
Toss potatoes, squash and onion with olive oil, Italian seasoning, crushed red pepper flakes, salt and pepper. Spread onto a large parchment lined sheet pan. Bake 20 minutes. Remove pan from oven and add broccoli, sausage, rosemary, and oregano. Bake another 20 minutes. Turn oven to broil and broil a few minutes. Finish with parsley and chives.

Yum yum yum! I threw together these Brussels tonight and they were so good!!
Air Fryer Brussels
Brussel sprouts, cut in half
1 shallot, sliced
Salt and pepper
Garlic infused olive oil
6 slices of bacon
Maple sugar, optional
Pistachios
Pomegranate arils
Lemon wedges
Balsamic glaze

Preheat oven to 400. Place bacon strips on a wire rack on top of a foil lined baking sheet. Top with maple sugar. Bake 15-20 minutes or until starting to crisp. Let cool and chop.
Toss Brussel sprout halves and shallot in olive oil, salt, and pepper. Spread onto air fryer pan and cook 10-15 minutes or until starting to crisp. Toss sprouts and add chopped bacon. Cook another 3-4 minutes or until desired crisping.
Remove to serving dish.
Finish with a drizzle of balsamic glaze, pistachios, pomegranate arils, and lemon wedges.

Perfect party appetizer. Dill pickle wrapped in Black Forest ham and cream cheese. To start, dry off the pickles. Lay out a piece of ham. Spread with a layer of cream cheese. I used dairy free Kite Hill. Great options are Laughing Cow, Boursin, or any spreadable cheese you like. Wrap a pickle spear and cut into fourths. So easy and delicious!

I’m calling this my post holiday detox vegetable soup. It’s packed with nutrient rich vegetables, herbs, and lots of flavor. Enjoy!

Detox Vegetable Soup
Olive oil
2 tablespoons plant butter
Chopped carrots, celery, onion, red bell pepper, and green beans
1 bag of cabbage mix
1 can diced tomatoes
3 teaspoons minced garlic
Fresh chopped rosemary and parsley
3 bay leaves
4 cups vegetable, chicken or bone broth
Juice of 1/2 lemon
Salt, pepper, crushed red pepper, Aleppo pepper, turmeric, cayenne

Sauté vegetable in 2 tablespoons olive oil and 2 tablespoons plant butter until starting to soften. Add garlic, fresh rosemary and seasonings to taste. Next stir in the cabbage and let the mixture cook for a few minutes. Pour in the diced tomatoes. Add the bay leaves and broth. Let the soup come to a boil. Reduce heat and simmer 15 minutes. Taste for seasoning and add more as needed. Finish with lemon juice and fresh parsley.
