This week's Staple bread is Sourdough Country Loaf. This week's loaf will include a slightly larger portion of whole-grain flour, a hard white wheat from Farmer Mai! This week's is a Sourdough Country Loaf, and will feature triticale as our whole-grain component! I'm excited about this one for a number of reasons -- firstly, this grain, which is a cross between wheat (triticum) and rye (secale), is one you don't typically see on grocery store shelves. In fact, I've never even eaten it before! It was bred in the late 19th century to combine the yields and quality of wheat with the environmental resilience of rye, making it more nutritious and ideal for cultivation in developing countries.

Secondly, if you're a huge nerd like me, you might remember that in the Star Trek Original Series episode "The Trouble With Tribbles", the tribble population explodes when they feast upon a shipment of "quadro-triticale" intended for agricultural use on a new colony, which has always made me curious to try the grain foy myself (a million tribbles can't be wrong!). This particular flour was grown by Riverdog Farms and milled by and I'm thrilled to have the opportunity to play around with it.
