Big news for our small (but mighty) microbakery! 🥖✨
We just welcomed a dough fridge for cold proofing into our little kitchen— and we could not be more excited. This beauty means better fermentation, deeper flavor, and even more consistency in every loaf we bake AND not having to use our own fridge packed with bannetons.
Cold proofing is where the magic really happens. Slower rises = stronger structure, richer taste, and that dreamy crust + crumb we’re always chasing. And now we can do it right, every time.
