It’s messy, it’s imperfect, it’s beautiful.
And in the end, it becomes more than bread — it becomes a reminder that good things take time. 🌾

High hydration means nothing without proper fermentation.
Under‑fermented dough will always bake dense and gummy, no matter how much water you add. Bulk fermentation is the backbone — never an afterthought.

I’d watch the dough, not the clock.
Temperature, starter strength, and flour all change the timeline. The dough should feel alive, elastic, slightly domed — not rushed, not collapsed.
