I know I've been MIA as of late but it's all for good reason! In October I started a job at Nicks Lobster House in Brooklyn! Here are just a few of the many things I've had the pleasure of making for the restaurant. Daily I am in charge of making fresh Biscuits and Garlic Parmesan Focaccia, and desserts are NY Cheesecake, Tiramisu, Caramel Chocolate Chunk Brownies, Red Velvet Cake, Carrot Cake are just some of the desserts l've been making. Each month we have been doing a specialty cheesecake, this months is Apple Pie Cheesecake, stay tuned to see what cheesecake is for next month!

It’s been awhile but your girl recently was asked to make a cake and smash cake for my little cousins 2nd birthday this past Monday! He is obsessed with Montsers Inc and University right now so we decided to make that the theme of the cakes. His smash cake is made to emulate Sully !

I went rogue with this recipe and it worked out 🥹 there are some minor changes I’d probably make but overall I’m proud to be able to work on my craft again, with my own recipes.

They look a little rough but taste AMAZING! 😋 homemade Twix Cookies. The caramel didn’t work quite the way it was supposed to but we made it work as best as we could.

Christmas desserts from this year😋first one is one that we’ve been making in my family for years, even before I was born, Graham Crackers and chocolate pudding, then I brought some homemade Chrusciki, Homemade Cream Puffs, one original and one cannoli filled, finally pup friendly cream puffs since it was also Saint’s birthday on Christmas, peanut butter cheesecake filling.

I know I haven’t posted in awhile, I have been having a very stressful trimester so far, but these are the finished plates from my bistro class last Thursday! Bistro is a Food Service Management require class and you get in teams of 2/3 and plan a restaurant. The restaurant theme is Bistro 61 but my teams menu theme was Seasonal Vegetarian. To start off the day we did a Charcuterie Board per table, Spiced Rainbow Baby Carrots with a Chickpea and Sauerkraut Purée and a Dill Mascarpone for the app, Parsnip and Chestnut Bisque garnished with toasted Pepita’s and Dill Oil for our soup, Cheesy Polenta and Vegetable Ragout topped with a Parmesan Crisp for our entree, and for dessert we had a Sweet Potato Tartlet with a Cranberry Coulis, Toasted Meringue, Fresh Plums and a Graham Cracker Crumb.
