ITS had the opportunity to make a “fun and happy” birthday cake for her downstairs neighbor. Her unusual request was to have one layer of carrot cake and one layer of chocolate brought all together with a cream cheese buttercream. ITS was very glad to be able to put it all together for the birthday girl!

Whipped up a batch of English Scones for a tea yesterday. I used a new recipe that called for pulsing room temp butter into the dry ingredients instead of cutting in cold butter. It also took 1 egg, not 2. I will admit I also mistakenly added 2 more tablespoons of butter than the recipe called for, as I was half asleep and not paying attention. The results were extremely tasty.The scone was less biscuit-y and more smooth. I think a nice improvement from the biscuit texture you get from the cutting cold butter into the dry. *I did not make the cornbread... it too was delicious. ;)

It doesn’t happen often, but when one of my Owls contacts me in need of a cake last minute.... I am only too happy to oblige! Happy Birthday Luna!! 3 rushed hours... 5 layers of white cake from scratch, peanut butter and vanilla buttercream to fill and finish and a fondant Owl to top off the cake! Phew!!

It's been about 3 or so years since I have put together a wedding cake. But it all came back. The only thing I really forgot was to put little feet under the base. Ooopsie. Bottom tier chocolate cake filled with vanilla buttercream and mid and top tier are vanilla filled with chocolate butter cream.
