Cannoli C

ookies are a Sicilian treat. This lightly sweet snack that is like your own personal cake. These awesome cookies were introduced to my father, Giuseppe by my Maternal Grandfather, Salvatore. These cookies were brought over from his home island of Lampedusa. This small island just south of Sicily is a tropical wonderland. Known as the Caribbean of the Mediterranean. My Nonno used to make these cookies for special occasions like Christmas or Easter. He would bring them out with espresso coffee and other sweets. Man, everyone used to fight over which Cannoli Cookies they would get. While Cannoli Cookies aren’t made with actual cannoli cream, they are made with ricotta cheese. Since cannoli cream is made from ricotta, it wasn’t a jump to call them Cannoli Cookies. Cannoli Cookies just sounds better than Ricotta Cookie. Don’t you think? Either way these awesome Cannoli Cookies are lightly sweetened with a glaze and some sprinkles on top. Not only are they delicious but they look beautiful as we. Cannoli Cookies are essentially a cookie made with ricotta cheese. The ricotta cheese is what gives our special treats that fluffy texture. As lots of people have told me, its like having your own personal little cake. We’ve had rave reviews from different people around the country. As a matter of fact you can click on this link

The Cannoli Cookies Story

So, what’s the story. Hmmm, where to start? Well my grandparents started Maria’s Original Taralli Baresi. The way that things started was… Ferdinando and Maria had a deli in Brooklyn. It was a simple deli, cold cuts, sandwiches the regular stuff. Nonna started making Taralli in the kitchen and giving them to Paisani (friends from the same village as my grandparents). After a while, Nonno started to get aggravated (as he is known to do) he said, “Maria, why are you working your butt off to give away these taralli to everyone. We are going to start charging” Over time they started selling taralli to other local Italian specialty shops. Eventually they had a full route of stores who ordered taralli every week. Wanting to retire, my Nonni sold the deli but continued selling taralli to stores in the area. Over time, they really wanted to retire and sold the business to my Papa, Guiseppi. My father grew the business and eventually made it into a full time job. Over the years my father said to my mother, “We need something else to sell to our retailers.” Then he added, “But, it has to be unique and delicious.” My mother, who is Sicilian, said that her father used to make these cookies with ricotta in them. She gave him the basic recipe:

Cake Flour

Sugar

Butter

Eggs

Ricotta

Vanilla Extract

and Baking Soda

So Papa started experimenting with these strange ricotta cookies. Now, for those who don’t know my Father, he is like a mad scientist in the kitchen and he is never happy with just “OK”. It took months to get a cookie just the way he wanted it and to figure out how to do large batches. The next discussion was, “What do we call these cookies.” Honestly, Ricotta Cookie doesn’t have a very good sound to it. I mean the cookies were delicious, they were awesome, people were going nuts over them. Ricotta cookie just doesn’t do it. So we did some brain storming. Eventually I said, “Well, Cannoli is made from ricotta, so why not make the stretch to calling them Cannoli Cookies.”

Everyone agreed and Cannoli Cookies were born. Thanks for reading about how Tre Colonne Cannoli Cookies came about. Maybe this story is only interesting to me, but someone out there might like to read about how our cookies came about.
