Before chili crisp and conservas boards, canned fish was survival food in Filipino households. American canned goods were introduced to the Philippines at the turn of the 20th century, but during WWII — around the time my dad was born — these meals became part of daily life. We made them our own by sautéing garlic + onion, adding eggs for protein, and reviving day-old rice with the same aromatics that became the base of so many Filipino dishes.
As Filipinos immigrated around the world, we carried these traditions into our new homes. This breakfast is still pure comfort to me.
