We celebrated my daughter’s birthday this past weekend, and she requested cheesecake! It was perfect timing because it was Audience Choice week on The Great British Bake Off and the signature challenge was flavored cheesecake. 😁 I made this NY style cheesecake with a buttery graham cracker crust, topped with cream cheese buttercream, spiced apple slices, and a handmade fondant axolotl squishmallow of her favorite stuffed animal. 🥰

I thank God for my daughter who is such a blessing to us. She is kind, thoughtful, creative, smart, and fun. We love her so much! 💗

I made these pretty mini iced gems for my daughter’s early birthday party today. These buttery shortbread cookies have crispy swirls of colorful royal icing and were the technical challenge for biscuit week of The Great British Bake Off . The recipe says it only makes 36, but in reality, it made about 70 cookies!

For the orange shortbread

100g unsalted butter, at room temperature

50g caster sugar

150g plain flour

Finely grated zest of 1 orange

¼ tsp fine salt

For the royal icing

2 medium egg whites

400g icing sugar

Pastel purple food colouring

Pastel pink food colouring

Pastel yellow food colouring

Pastel peach food colouring

Pastel blue food colouring

Thank you Tiffany for ordering this special cake for your friend, Dalila’s birthday! 💜🖤 She wanted a cake with a purple and black color palette to go along with the magic themed invitation. ✨ She said everyone said the cake was so beautiful and delicious!

Cake details: chocolate cake with raspberry jam filling and strawberry buttercream outside. I used King Arthur Baking Company black cocoa to make the black frosting. The purple butterflies are made of edible paper.

Thank you Emma for ordering this Wolverine/Logan cake and these cookies for your son’s birthday!! 💛🖤 As I was decorating these cookies, I totally had the X-Men cartoon theme song playing in my head. Haha it brought back memories of watching it on Saturday mornings at my grandparents’ house. 😅

The cake is vanilla cake layers with strawberry buttercream filling and cream cheese buttercream outside with a fondant mask. The cookies are sugar cookies with royal icing. Emma said everything was perfect as always! 🥰

Today was the start of the Queens County Agricultural Fair and Blue Ribbon Competition! I entered this coffee & pecan cake in the spiced cake category and it won first place!!! 🥇 I was inspired by the first week of the Great British Baking Show The Great British Bake Off and the technical challenge recipe by Nigella . I made a mini version of it and I will share the ingredients proportions below. The judges said it had good frosting and a beautiful appearance! 🥰

(Makes three 4 inch sponge cake layers, but I only used two layers for this cake)

Ingredients
For the sponges:
50g almond flour
170g caster sugar
170g unsalted butter
3 large eggs
150g AP flour
1 tsp baking powder
1/4 tsp baking soda
Pinch of salt
1/2 tbsp instant espresso powder
1.5 tbsp milk

For the buttercream:
150g soft unsalted butter
320g powdered/icing sugar
1 tbsp DeLallo Foods instant espresso powder
1.5 tbsp heavy cream
1/2 tsp Diamond kosher salt
113g pecans, reserve 6 whole, finely chop remainder

The scent of this bread baking in the oven was wonderful! Haha I kept sniffing the air in my apartment and I was so happy. 😁😆 I tried this new Sourdough Milk Bread recipe from King Arthur Baking Company and used my trusty sourdough starter, Carter. It came out so fluffy, soft, and delicious with a nice tang from the sourdough! Thanks Martin Philip for the recipe!

Welcoming Autumn with this delicious homemade apple pie! 🥧 When I saw this recipe on King Arthur Baking Company, I was curious about the boiled apple c***r that was on the ingredient list. Would it add another dimension to this classic pie? The answer is a resounding yes! My husband commented that the apple flavor was even stronger with it. 🍏 Flaky, buttery crust dotted with sparkling sugar, tart Granny Smith apples, and a warm cinnamon scent, it’s a dream to eat. 😁

Happy 15th Anniversary to my wonderful husband! 💚🩷 What a blessing it is to have such an encouraging, funny, hardworking, wise, and loving husband. I am so grateful that God brought us together and that we can share all of life’s moments, both the sweet and the bittersweet. That is what this matcha tiramisu is, slightly sweet from the mascarpone cream, and slightly bitter from the matcha. I made Keroppi and Keroleen sugar cookies with royal icing to decorate the top. 😁

Happy International Chocolate Day!! 🤎 I’ve been wanting to try this recipe from Sally McKenney for some time and it was delicious! This Nutella tart with toasted hazelnut crust is decadent and rich. I did halve the recipe and made two smaller tarts.

One of my favorite hobbies is to go thrifting. I often find baking pans and tins at great prices. I found the 4 tartlet pans that were new for only $4! Who doesn’t love a good deal? 😁

Happy birthday to my niece! 💜🩵 She requested a dragon cake with lemon inside so that’s what I made! When she saw it, she said, “How can anyone eat it? It’s too cute!” 😁

Cake details: 4 layers of vanilla cake with lemon curd filling and cream cheese buttercream with Satin Ice fondant outside.

Happy birthday to my nephew! He loves Pikachu and Pokémon! 💛❤️ It’s great to see him growing up and playing with his older cousins. It’s always a fun time when we get together! 😁

This my first time trying a decorated chiffon cake recipe from Maddison Clement . I took portions of the batter and colored them with AmeriColor food gel. Then I piped each color on the bottom of the pan on parchment paper in the design of Pikachu. This Pikachu is baked directly into the sponge cake! I put white chocolate whipped cream and raspberries in between the layers. It was a very light and not too sweet cake. 😉

Carter the starter is back again with this lovely sourdough bread loaf! I decided to do an experiment and leave the cover on my Dutch oven the whole baking time. It resulted in a softer crust and it was less browned. Haha my husband liked it a lot better since it was easier on his jaw. 😅

I gave extra sourdough starter to 2 people in my neighborhood “Buy Nothing” group yesterday. I think I may have given starter to more than a dozen people so far. Soon there will be many more loaves made from Carter! 😁
