Nut-Filled Rugelach😋🥰
Ingredients:
2 cups all-purpose flour
1/4 teaspoon salt
1 cup unsalted butter, chilled and diced
8 oz cream cheese, chilled and diced
1/4 cup granulated sugar
1 teaspoon vanilla extract
1 egg yolk (for egg wash)
Filling:
1/2 cup walnuts, finely chopped
1/2 cup pecans, finely chopped
1/4 cup brown sugar
1 tablespoon ground cinnamon
2 tablespoons honey
2 tablespoons unsalted butter, melted
Directions:
In a large mixing bowl, combine flour and salt. Cut in butter and cream cheese using a pastry cutter or fork until the mixture forms coarse crumbs. Add vanilla extract and knead lightly until dough comes together.
Divide the dough into 3 equal portions, wrap in plastic wrap, and refrigerate for 1-2 hours or until firm.
Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
Prepare the filling by mixing chopped walnuts, pecans, brown sugar, cinnamon, melted butter, and honey in a small bowl.
Roll out one portion of dough on a floured surface into a 10-inch circle. Spread a thin layer of the nut filling over the dough.
Cut the dough into 8-12 wedges (like slicing a pizza). Roll each wedge tightly from the wide end to the point to form crescents.
Place the rugelach on the prepared baking sheets. Brush each piece with egg wash.
Bake for 20-25 minutes or until golden brown. Allow to cool slightly before serving.
