🍰 UBE ROLL CAKE
Procedure
Preheat oven to 170–175°C (340°F). Line a 10x15 inch baking pan with parchment paper.
In a bowl, sift together Set A: cake flour, baking powder, and salt.
In another bowl, whisk egg yolks, sugar, oil, water, and ube flavoring until smooth.
Add the dry ingredients and mix until smooth. Set aside.
Make the Meringue
Beat 8 egg whites until foamy.
Add cream of tartar, then gradually add ½ cup sugar while beating.
Beat until soft to medium peaks.
Combine
Fold ⅓ of the meringue into the batter to lighten it.
Gently fold the remaining meringue until well combined.
Bake
Pour batter into the prepared pan and spread evenly.
Bake for 12–15 minutes.
Roll
Remove from oven and turn onto parchment paper dusted with sugar.
Roll the cake while warm and let it cool.
Unroll, spread filling, then roll again tightly.
☕ MOCHA ROLL CAKE
Procedure
Preheat oven to 170–175°C. Line a 10x15 inch pan with parchment paper.
Sift together cake flour, baking powder, salt, and coffee powder.
In another bowl mix egg yolks, sugar, water, vanilla, and oil.
Add dry ingredients and mix until smooth.
Make the Meringue
Beat 4 egg whites until foamy.
Add cream of tartar (or vinegar).
Gradually add ¼ cup sugar and beat until soft peaks.
Combine
Fold ⅓ of meringue into batter.
Fold the remaining meringue gently.
Bake
Spread batter in pan.
Bake 12–15 minutes.
Roll
Turn cake onto parchment dusted with sugar.
Roll while warm and cool completely.
Spread frosting then roll again.
🍫 CHOCOLATE ROLL CAKE
Procedure
Preheat oven to 170–175°C and line a 10x15 inch pan.
In a bowl whisk egg yolks and ¼ cup sugar until light.
Add oil and milk and mix well.
Sift together cake flour, cocoa powder, baking powder, and salt.
Add to yolk mixture and mix until smooth.
Make the Meringue
Beat 6 egg whites until foamy.
Gradually add ½ cup sugar while beating.
Beat until soft peaks form.
Combine
Fold ⅓ of meringue into chocolate batter.
Fold the remaining meringue gently.
Bake
Spread batter evenly in the pan.
Bake 12–15 minutes.
Roll
Turn cake onto parchment dusted with sugar.
Roll while warm and cool completely.
Add chocolate frosting or filling, then roll again.
💡 Tip for roll cakes:
Always roll the cake while warm so it does not crack later.
