These are delicious 😋 try them next time you have a pound or two of ground lamb!

🐑 Ranch-Style Ground Lamb Sliders

Yields: 8–10 sliders
Prep time: 15 min
Cook time: 10–12 min

---

Ingredients

For the sliders:

1 lb ground lamb (pasture-raised if you’ve got it 😉)

1 tsp salt

½ tsp black pepper

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

½ tsp dried oregano (optional but adds a nice earthy kick)

1–2 tsp Worcestershire sauce or balsamic vinegar for depth

1 tbsp olive oil or butter, for searing

For serving:

8–10 slider buns (or Hawaiian rolls if you want a little sweetness)

Cheese (feta, provolone, or white cheddar all work beautifully)

Toppings:

Caramelized onions

Fresh spinach or arugula

Roasted red peppers or tomato slices

Ranch or garlic aioli

---

Instructions

1. Mix the meat:
In a medium bowl, combine lamb, salt, pepper, garlic powder, onion powder, paprika, oregano, and Worcestershire. Mix lightly with your hands — don’t overwork it.

2. Form patties:
Divide into 8–10 equal portions and shape into small patties (about 2 inches wide). Press a little dimple in the center of each so they cook evenly.

3. Sear:
Heat a cast-iron skillet or griddle over medium-high. Add oil or butter and sear patties 3–4 minutes per side, until golden brown and cooked through (internal temp ~160°F).

4. Cheese it:
Add cheese slices in the last minute of cooking, cover the pan to melt.

5. Assemble:
Toast your slider buns (trust me — it’s worth the extra 2 minutes), then layer with aioli, greens, lamb patty, onions, and any extras you like.

---

Optional twist:

Mix 2 tbsp crumbled feta and a handful of chopped mint or parsley right into the lamb before cooking for a Mediterranean spin. Pairs great with a lemon-garlic yogurt sauce.

Ever wondered what comes in a quarter lamb package? 🐑✨

Here’s the breakdown:
🥩 A mix of tender rib or loin chops (your grill’s new best friend)
🍖 One leg or shoulder roast (perfect for a cozy Sunday dinner)
🍲 A couple lamb shanks (slow-cooked comfort in a bowl)
🍔 And 1–2 pounds of ground lamb (burgers, tacos, or shepherd’s pie magic)

It’s the ideal size for smaller households or anyone wanting to fill their freezer with quality, pasture-raised lamb — without committing to a half.

➡️ Message us to reserve your quarter this season. Local pickup only, while supplies last!

Howdy y'all! 🤠

We have great news 9 days left!! Ain't that amazing.

It's getting really close, so if you want to try some of those recipes that we've been sharing, nows a great time to sn**ch up a quarter lamb. It's a great value at a good price. (😏 or so we've been told) it doesn’t get any better than that.

Our lamb is hormone and vaccine free, only fed the best we have around.

All right, I'll stop bragging 😉.

Seriously though, it great stuff!

Pasture-raised vs. conventional — it’s more than just where they stand.

Our lambs spend their days grazing open pastures, moving with the seasons, and doing what lambs do best — eat, nap, and repeat. 🐑☀️

Conventional lambs? Let’s just say their view’s a little more… crowded.

That difference in lifestyle shows up in the flavor, nutrition, and peace of mind that comes with knowing exactly where your food comes from.

🥩 Curious which one you’d rather serve at your table?

There’s nothing cozier than a pot of tender, fall-off-the-bone lamb shanks simmering on the stove. 🕯️
Here’s how to make them:

1️⃣ Season shanks generously with salt and pepper.
2️⃣ Sear on all sides in olive oil until browned.
3️⃣ Add onion and garlic; cook until fragrant.
4️⃣ Stir in tomato paste, herbs, broth, and red wine.
5️⃣ Cover and simmer (or bake at 325°F) for 2–2½ hours until meat is fork-tender.

Serve over mashed potatoes or creamy polenta and soak up every bit of that sauce.

Sunday dinner, anyone?

🥩 Classic Skillet Lamb Loin Chops

Serves: 2–3
Cook time: ~20 minutes (plus a short rest)
---
Ingredients

4–6 lamb loin chops (about 1–1.5 inches thick)

1½ tsp kosher salt

½ tsp freshly ground black pepper

2 tbsp olive oil

3 cloves garlic, smashed

2–3 sprigs fresh rosemary (or thyme if you prefer)

2 tbsp butter

Optional: a splash of white wine or squeeze of lemon to finish
---
Instructions

1. Bring to room temp.
Take your chops out of the fridge 30–45 minutes before cooking. (Cold meat straight from the fridge = uneven cooking.)

2. Season generously.
Pat dry with paper towels, then season both sides with salt and pepper. Don’t be shy — lamb loves seasoning.

3. Heat your skillet.
Use a heavy cast-iron or stainless steel pan. Heat over medium-high until just smoking, then add olive oil.

4. Sear the chops.
Place chops in the pan and don’t move them for 3–4 minutes. You want a deep golden crust. Flip and sear the other side another 3–4 minutes.

5. Add flavor & finish.
Drop in the butter, garlic, and rosemary. Tilt the pan and spoon the melted butter over the chops for another minute or two.

For medium-rare, internal temp should be 130–135°F.

For medium, go 140–145°F.

6. Rest.
Transfer to a plate, tent loosely with foil, and let rest 5 minutes before serving.

7. Optional finishing touch.
Deglaze the pan with a splash of white wine or squeeze of lemon, scraping up the browned bits, then drizzle that over your chops.
---
🔥 Pro Tips

Pair with garlic mashed potatoes, roasted carrots, or sautéed greens for a complete meal.

If you want a deeper flavor, marinate the chops overnight in olive oil, lemon, garlic, and rosemary — then pat dry before cooking.
