This is my Easter cake this year...lemon cake with lemon buttercream frosting...made with real lemon juice and peel and cream puffs made for Sam's St. Patrick's Day potluck at work. No cupcakes for this this month, but I have about 200 to make in the next 2 weeks and then on to Sam's birthday :) I hope you are all enjoying for spring!

So last weeked was Klea's birthday...she kept asking for strawberry cupcakes so I came up with a vanilla batter with strawberries cut up and added to the batter and then topped it with a cream cheese frosting and they are topped with white and pink rock candy as per instructions of the three year old! They kinda had a strawberry cheesecake taste to them. I included some of the in process picutres this time.

Made my first ever from scratch Angel Food cake today and my first ever pastry cream! I am so proud of how far I have come! I am making more and more from scratch and the more I make the more I wonder why I ever made things from the box! I also made homemade chocolate/peanut butter browines for Sam the other night for snack for work! They tasted really yummy! Klea's cupcakes are next, and then it is on to Easter and a bunny cake! Happy baking everyone!

Thanks for sticking this out with me! I am getting ready to make cupcakes for Klea's 3rd birthday this year! This week I am making farm animal faces to top cupcakes and a tractor cake! This is what I got done today with my awesome assistant! A big thanks to my husband who took the day off because I fell down the stairs and volunteered to help so I could take it easy!

This weeks challenge is making a gymnastics cake for my niece. This does include a pair of uneven bars, a beam, a vault and floor mat! Everything but the mat will be made with home made modeling chocolate while the rest of the cake will be fondant covered! I can't wait to see how this all turns out!
