Following a vacation in Grand Turk, Puerto Rico, and the U.S. and British Virgin Islands, including St. Maarten and St. Thomas, I was motivated to prepare Cuban sandwiches with yellow rice. I made sofrito for three dishes, utilizing pork loin and pork butt, and combining heavy garlic sofrito with sour orange sauce and seasonings, resulting in very satisfactory dishes. The inspiration for all three dishes came from Puerto Rican cuisine, and I served them on Cuban bread that I had brought back from Florida. Today, I am feeling slightly better.😋❤️
