I made this beauty last Thursday for dinner. Roasted an acorn squash from our garden and a small butternut from one of my misfits boxes. This way, I have leftovers for squash bowls at lunchtime for a few days.

I'm really proud of this artistic waterfall.

Acorn squash half, lacinato kale (shallots, fat), Dubliner, lentils (saved some to season with s&p and include in this meal, but the main reason for their preparation was beet humus I've been wanting to make with beets from our garden - *If anyone knows where I may have seen this recipe, please let me know! It seems I did not bookmark the post!!*)

What's your favorite squash bowl? It was one of my first go-to meals when I started the and I'm happy to see so many people making them now. It's so inspiring!

My first "cereal" since before I started this journey!!

I finally decided to try out the lactose free milk, have been thinking about it for a long time, but I'm always waffling on if I should, or if I should go with nut milk and today I decided to go for it. I really needed this unbelievably delicious pick-me-up today. Food can't solve all of ones problems and take away your woes, but it can bring a little moment of joy to provide a bright spot in a tough time.

I hope y'all are finding this for yourselves today too ❤️

I'm very proud of this plate, which is why I'm actually posting, which many of you may know I often have a hard time getting the oompf to do as frequently as I'd like.

Leftover tenders made using 's recipe. I made these sweet potato fries to go with the last of them. Prepped them early today (while I was working on preserving more garden treasures) and got them ready for baking when I felt like I should each lunch soon, which is another aspect of this meal that I am proud of. All too often, lunch is just reheating some leftovers that need to be finished up before I make something new. Today, I used some leftovers, but also created anew and that's super rewarding. This beautiful plate was an added bonus to the feeling. I even took the extra step to not only get a ramekin, but choose a blue one so I could feel extra fancy. I'm eating outside, so I can enjoy the gorgeous fall weather and more completely enjoy this lovingly-made meal. I hope everyone is having meals like this! 😁

Salad using the rest of this fancy crispy lettuce which is a hybrid of romaine and iceberg, butter lettuce from the head I'm trying to regrow, seriously sharp cheddar, 🍅three varieties of tomatoes from our garden, 🥒cucumber, 🥑avocado, thinly sliced red onion, kalamata olives, and my homemade vinaigrette.

🍠The fries have olive oil (accidentally used the fancy kind), salt and pepper.

Homemade honey mustard: Spicy brown mustard and raw, unfiltered honey🍯.

Some Gouda cheese slices🧀.

All my fellow scd folks, I highly recommend you check out ! They make delicious vitamin supplements that are scd-friendly because they are simply local all-natural Tennessee honey with the addition of the vitamin! 🐝🍯

They have a convenient on-the-go option, the familiar honey stick, as well as beautifully designed hexagonal jars. 😍

I don't regularly take vitamins or supplements, but I'm seriously considering Vitamin Honey as an edition to my daily routine. I first tried the vitamin D stick on a gray, cloudy day - days during which, like many of you, I'm sure, I typically am lacking energy and don't feel my best - and I felt energized, upbeat and ready to take on whatever I faced. It is a serious mood-booster and has that amazing all-natural raw honey taste that I adore.

The vitamin C stick has that familiar honey flavor while also having a pleasant, not too over-powering sour tang, due to the ascorbic acid.

Many of us struggle with absorbing nutrients and then are hit with the reality that most supplements simply are not safe for us to consume because of all the added ingredients in the products. I am a huge fan of Vitamin Honey because they are meeting this important need for so many of us that large companies have forgotten, or simply don't care about. Pesto drizzle. Cucumber slices because we have so many from the garden and they are super refreshing. Added some more tomato because the wave is coming from the garden soon and the pizza could honestly use more toppings than I had originally estimated.

Blueberry pancakes

I used 's recipe. These are absolutely amazing!! Don't even need any toppings, but I had a little honey on some. Elated that I have leftovers for later! This recipe was so simple and fun to make; possibly the most delicious pancakes I've ever eaten.
