Breaking in and Baking in the new Atlas 3 Bread oven went good this weekend. Basically learning how to bake sourdough a different way now, Open baking in an oven with steam is a little different than dutch ovens in the home residential oven.
I baked 14 test loaves on each of the shelves at different temps, times, and steam time intervals to test the reaction of the loaves.
