Having fun with loaves. 🫶🏻
I played around with my recipe a little bit. This recipe is for two loaves. My go to lately has been:
750g of water.
300g of active starter.
20 g of salt.
20g of honey.
1000g of King Arthur bread flour
It was a bit too much hydration for me so I toned the water back a little bit. Last night I did:
700g of water
300g of active starter.
20g of salt.
20g of honey.
1000g of King Arthur bread flour.
The dough was a lot easier to work with and I feel like I got more of a belly and ear.
The first loaf, I baked in a small Dutch oven which didn’t get much of an ear. The second loaf, I baked in my medium size (my go to) and got a bigger ear.
I bake at 450 degrees for 30 minutes. After that 30 minutes is up, I reduce the head to 425 degrees with the lid off for 15 minutes.
Goal for me.. to continue to work on my designs.
