I’ve been wanting a peanut butter cookie with a soft, chewy middle that uses the natural peanut butter I always keep at home (you know, the kind that separates into two layers LOL)!

Five years ago, I made cookies from scratch for the first time ever 🥹 even though I had no clue what I was doing at the time.

Over the next year, I gained more kitchen skills, made my own sourdough starter, and began baking sourdough bread and discard recipes (like sourdough cookies)!

Fast forward to today, where I now create and develop my own unique sourdough cookie recipes each week to share with other sourdough bakers. I’m so proud of myself for not giving up! 🥰 If you have been putting off learning something new, now is the time! It will only get better from here.

🍪 Large, No-Chill Sourdough Chocolate Chip Cookies

Save for the next time you need a quick dough that’s ready to bake right away!

Ingredients
- 1¼ cups light brown sugar, tightly packed
- 1 tbsp granulated sugar
- ½ cup salted butter, “dent soft”
- ½ cup sourdough starter, stirred down
- 2 large egg yolks
- 2 tsp vanilla extract
- ½ tsp salt
- 1½ cups all-purpose flour, scooped from bag
- 1 tsp baking soda
- 1⅓ cups chocolate chips�
Directions
1. Preheat oven to 350°F and line a baking sheet.
2. Cream butter and sugars.
3. Add sourdough starter, egg yolks, vanilla, and salt. Beat until combined.
4. Add flour and baking soda. Stir just until combined (don’t overmix!)
5. Fold in chocolate chips.
6. Scoop into large 3-tbsp portions. Scoops are ready to bake immediately, no chilling needed!
7. Bake for 13–16 minutes. The edges should be set, but the centers should still look soft.
8. Cool on baking sheet for 7 minutes before transferring.
