I meant to post this recipe ages ago, but obviously things got busy and I just now realized my omission! This creamy mushroom pasta brings out the warm, nutty notes of Brine's Fine Honeys Chestnut Honey from Spain. Did you know that the American Chestnut tree, once a very abundant and important food source for many animals and even humans, was all but wiped out in less than 40 years after the Chestnut Blight arrived in the early 1900's? So, if you love the woody, earthy taste of Chestnut Honey and wish to enjoy its unique taste, it has to be imported. As many of you know, the world of importing has been turned on its head over the last 1 1/2 years with high tariffs and high fuel prices, among other things. It is my passion to share the world's most intriguing honey varietals with you, but I do not anticipate being able to bring in more Spanish (or any other country's) honeys until things settle down. So... grab what you can while we still have it in stock! We will always do our best, however, to have a wonderful assortment of domestic varietal honeys available, and we still have some delicious Spanish Forest Honey and Spanish Heather Honey in stock, while supplies last.
