Last night ended up being a very late baking session. The strawberry rhubarb pie from Sweeter Than Honey was the perfect midnight pick-me-up!
I thought it was a perfect balance of tart and sweet, and a couple minutes in the toaster oven took it to a whole new level. This is the kind of pie that doesn't even need cream to be a first-rate dessert🏆

Vocab of the day: Autolyse
Pronounced "auto-leese", it is basically letting your flour soak in water before adding any other ingredients. It's actual effect on dough is debated quite a bit, but I can tell you it makes a SIGNIFICANT difference in whole-wheat bread.
The extra time soaking allows the wheat to hydrate and soften, which improves the moisture and gluten structure of your final loaf. If you're struggling with crumbly bread, consider giving it a try!

I have no words. Needless to say, there are far more experienced and prolific sourdough bakers than me, and Rusty Acres Homestead Breads is most definitely one of them! I literally cannot think of praise high enough for the italian cheese bread.
You can find them at several markets throughout the week (including Marshfield!) as well as a brick-and-mortar in Conway. You'd be doing yourself a real favor by checking out their page!
