Proof that practice is everything in baking! 🥯

One year ago, I pulled my very first batch of bagels out of the oven (first pic). They were flat, a little pale, and definitely a learning experience!

Fast forward through 12 months of tweaking recipes, dialing in the fermentation, perfecting the boil and bake, and shaping hundreds of bagels... and today’s batches look like this!

To anyone starting out on their baking journey: keep going, embrace the ugly loaves/bagels, and document your progress. You’ll be amazed at how far you can come in a year. 🌾
