WE'VE CLOSED OUR DOORS

Hello everyone!

As you guys know, a little over a year ago I decided to re-open my baking business after being laid-off from my corporate job. These past 14 months have been an amazing journey. They came with many challenges, but incredible growth as an entrepreneur and a baker. The real growth, however, happened internally. Every day presented an opportunity to intentionally choose to serve to the best of my abilities, even when sometimes I didn’t feel I had the skills needed. This I owe to your trust in me and endless encouragement.

After much thought and prayer, I’ve decided to close the business and move in a different direction. When I re-started the business, I wanted to bring joy to people’s lives and be part of some of their most memorable celebrations. As the business grew, so did my desire to bring lasting transformation to others.

There are a few things I’m currently evaluating and Financial Coaching is at the forefront. Earlier this year I got certified as a Financial Coach under the Ramsey Solutions organization. In the past, I’ve shared how John and I got out of thousands of dollars in debt following Dave Ramsey’s teachings, allowing us to gain control of our money, but more importantly, changing our behavior towards it, and our marriage as a result. I’ve also been learning a lot about mindset, and how some of our habits don’t serve us well and keep us stuck.

As of today, I will no longer be providing baking services, but I don’t want to leave you empty-handed. During this past year, I’ve met three really incredible bakers in our area that always provided a helping hand and guidance when I needed it the most – Crystal Bell @Bell & Co. Cakes, Kristi Latzak @Summit Sweets, and Gabby Brock @Cookie Creations by Gabby. THANK YOU LADIES! ❤️ I encourage you to reach out to them for your future baking needs. They are incredibly talented!!

This past Christmas Eve we had the opportunity to celebrate my mom's 74th birthday. Our family, my sister and even our dogs (Bailey, our puppy, and Nola, my sister's dog) were all there for this special celebration. My mom had never had red velvet cake so I made her one. I'm truly grateful for the chance to celebrate her birthday again this year.

What happens when you bake for a living? ... your kids want that very unconventional, but highly desirable cookie cake. 🍪🎂🍪 Of all the things, both my kids wanted a cookie cake for their birthdays this year!! 😏

So I put myself to "work" and made my first cookie cakes! I have to say, they were much easier than I imagined. First, I cheated ... yeap, I used store-bought GF cookie dough and icing.😲 And both kids wanted to help with the decorations -- those cool fondant cars you see on Jack's cake, they made them!

I'm happy to say that it was a fun experience after all!! ☺️

Your recipe calls for buttermilk and you forgot to get some at the store... No problem! here's how to make your own. 🥛🍋🥛

INGREDIENTS:

4-1/2 teaspoons white vinegar, or fresh lemon juice
1 cup milk (2% or whole milk)

RECIPE:

- Pour milk into a glass-measuring cup
- Add white vinegar or lemon juice
- Stir to combine and let stand for 10-15 minutes until the mixture begins to curdle.
- Use as needed, or cover and refrigerate until needed. I recommend making it the day you're going to use it.

Although this is the elves and reindeer's season, unicorns are still pretty magical. 🦄🦄

This was the birthday cake for a 9-year old girl who loves all things whimsical and sparkly. The cake itself was multi-color to match the mane. Sprinkles were spread around the mane and bottom of the cake.

What's the difference between milk and buttermilk anyway? 🥛🥛

Whole milk has 3-5% milk fat and buttermilk has less than 1%. It was traditionally the liquid left behind after churning butter, but today it's cultured using lactic acid and even though it's lower in fat than whole milk, the lactic acid makes it more viscous.

Is that viscosity that makes it great for extra moist baking. That said, you can't substitute one for another without altering other ingredients (ie. baking powder/soda) on a recipe.

One of my favorite traditions since I moved to the US 18 years ago is making Coquito during the Christmas time. "What is Coquito?" you might be wondering. The best way to describe it is deliciousness!, but in a nutshell it's Puertorrican eggnog. 🥂

My family knows that it's not Christmas until I make my Coquito! It brings fun memories and helps me enjoy a little piece of my island here at home during this time of the year. 🎄💕 🎄

Happy Tuesday!

When the dessert recipe you're following calls for butter, do you use salted or unsalted?

For the most part, sweet recipes (cupcakes, cookies, etc) require unsalted butter... When it doubt, go for unsalted butter --- you can always add salt to the recipe, but once salted, you can't remove it, so take the safe route! 😂
