100% whole grain spelt bread! Spelt is easily my favorite grain and I’ve learned that a lot of folks really love it too. This loaf is from a demonstration/class I did last week for a sweet family. I’m thankful they remembered to take pictures 😅
If you ever want a sourdough lesson either in my kitchen or at your home, reach out to me and I am happy to show/share what I’ve learned. I think learning hands-on is so helpful when it comes to bread making. Plus you get bread out of the deal 😁

With so much going on in my life lately, I really haven’t done much baking. Last night I *finally* mixed up a batch, (mainly due to the persistent pleadings of my brothers!)
I’m liking the rustic loaves 😋
100% Ancient Einkorn Wheat loaf baked in cast iron to get that beautiful, flavorful crust.

Why Use Natural Yeast or Natural Sourdough Starter?

This question is what sparked baking our own bread and why we only use natural leavening. Plus, it is beautiful and tastes amazing (even kid-approved!)

Grocery store yeast is not a naturally occurring substance. Since 1984, most has been made by man and created in the laboratory. At about the time the Rapid Rise yeast came into being, is the time when another trend- the beginning of a continuing spike in celiac disease, gluten intolerance, acid reflux disease, diabetes, and wheat allergies. There is evidence that using natural yeast can help combat these problems. The slow rising process of natural yeast has many critically important health benefits.
