Poor guy. 🤣

He had no idea he "signed up" to be my free labor in the bakery.

But here he is hauling up the last of the 300 lbs of flour that was delivered yesterday.

He always unpacks it and brings it upstairs for me to save me time later.

He is a keeper. ❤️

Thursday are my biggest bake, package and delivery day.

4 out of the 5 stores restock on Thursday.

The day begins at 2:30 am to start the oven - and then baking like a banshee until its all done. Packaging as they cool, washing pans as they are emptied and then deliveries. The back home to prep for my Friday restock.

So if you see me on Thursdays and I seem unresponsive or slow...now you know. 🤣

The kitchen is clean and quiet on this Sunday afternoon.

I was just standing here thinking about the week ahead and was struck by a deep sense of gratitude.

I am so very, very grateful for the communities where I sell bread and baked goods. Thankful for the opportunity to be able to do something that I enjoy - that challenges me - and something that people enjoy.

And I am grateful for the rare quiet of the kitchen on a Sunday afternoon that gives me the time to reflect on how blessed I truly am in more ways than I can articulate. ❤️

Life is a learning proces - so is baking.

The croissants got a little too warm as they were proofing- the majority of the butter melted out of them 🤣🥴.

Did I still bake them - absolutely.

Were they beautiful and flaky? Not so much.

Were they still tasty - yes!

Will I try again - without a doubt.

There's a reason you don't see many home based bakers selling these. They are very labor intensive 🥴
