When my 8 year old niece asked for a "Confetti Cat Cake". I was unsure of how I was going to tell a story without just making a simple "Confetti" and "Cats" cake.

So I did my best with a confetti inside and out sheet cake, holding the serene scene below:

2 Cats sitting by the mountain side fishing from the waterfall. A literal mountain of vanilla sponge, hand painted with ganache for texture and depth, edible coconut moss, and chocolate covered coffee beans for the river and mountain rocks, and finally, hidden behind our furry friends are stacked the first two catches of the day.

Upside Down Peach Cobbler!

I tried my hand at creating a "Rose" pattern when flipped, but it seems the cobbler swallowed some peach. What makes this more special is the cold milk infusion I added to the pastry.

Jasmine Tea, cold infusion milk instead of regular milk, gives the cobbler a slight floral aromatic that holds the freshness of the peach, but doesn't overwhelm with a "tea" taste.

For Christmas, my mother gifted my son a Blue's Clue Cookbook!

In the show, Josh, often represents and shares his Filipino culture with the audience! In one episode, Josh and Blue bake a bibingka, a Filipino rice cake, for his Lola.

I happened to have the ingredients for the bibingka already lying around the house, so I decided to give the recipe a try and share it with my son and mother.

It was sweet, slightly chewy, with a slight coconut taste from the coconut milk. The banana leaves added quite a pleasant aroma and is always fun to work with!

A wonderful recipe from a wonderful country rich in culture and delicious food!
