What makes Marneycakes special?
No expense is spared on the best ingredients - butter in the cake, and genuine buttercream. The ganache is made with silky heavy cream, and dark chocolate. The vanilla? Always Madagascar Bourbon. Taste the difference.
This gum paste peony was sculpted and colored with edible lustre dusts. Each peony takes 4 hours to craft, from a lump of white gum paste (sugar dough). I trained under Betty Van Norstrand, who taught Sylvia Weinstock, Buddy Valastro (The Cake Boss) and many other cake luminaries their gum paste craft.

PUMPKIN PIE LESSON:
How do you make the flakiest, most buttery and fragrant pie crust ever? Use real butter, and DO NOT HANDLE the dough until you absolutely must! Think of how a croissant gets its flakiness. Very similar. Let your dough rest for at least 20 minutes in the fridge, then roll it out (again, handling it minimally). Place it in your pie pan, and bake it empty. Next, prepare your filling, fill the pie, and bake. Don’t forget to protect your edge from burning! It gets uncovered during the last 15 minutes of banking.
My fall crusts are always adorned with leaves, and painted with an egg wash to allow them a glossy browned finish.
My pumpkin pie is no longer vegan, but is still made with velvety silken tofu, eggs, and organic pumpkin purée for an extra firm and rich texture and flavor. The aromatic spices are to die for!
Cardamom and coriander are also added to my fall pies for that little something extra special!

One of the few wedding cakes I created that had real flowers on it. It’s important that love flowers on cakes are organic; otherwise, you are infusing your cake with (and ingesting!) strong pesticides.
