One of the winners of the cake walk will get this third cake I made for Holy Trinity. I call this cake Cocoa Butter Pecan Pancakes with Maple Syrup. This cake is a Butter Pecan cake with a light hint of cocoa. There is a slightly dense texture like pancakes and the icing is a wonderful maple glaze that is made with a full cup of real maple syrup.

My second cake that I donated to Holy Trinity is a bundt cake. It is a coffee cake (literally) made with very strong espresso and dark cocoa. I named this my Mule cake. That is because us mules need our coffee in the morning. This cake is topped with a chocolate glaze and a little bit of vanilla glaze. This cake is amazing.

I made three cakes for the cake walk today at Holy Trinity in Atwater. The first one is a cake I call Lemonade with Blueberry. It is a lemon cake with a light layer of organic blueberry jam and a light layer of lemon frosting in the middle. The cake's frosting is made with lemon juice and lemon zest. The cake is topped off with blueberries and lemon zest.

Today's order was for 40 vegan gluten free chocolate mini cupcakes and 1 1/2 dozen peanut butter banana oat cookies!

I hit a home run here - these were heavenly. I baked just over 80 cupcakes Tuesday. Chocolate and Vanilla where requested flavors and the third flavor was my choice. I chose Cream which is my favorite. With each flavor I frosted half with chocolate frosting and half with vanilla frosting.
