We’re getting closer to opening and are building our team at our 100% gluten-free bakery & café in Linthicum Heights, MD.

NOW HIRING:

☕ Barista / Front of House Team Member
Prepare drinks, take orders, assist customers, package bakery items, and maintain a clean, welcoming front-of-house.

🧼 Dishwasher / Janitorial Team Member
Wash and sanitize dishes and equipment, clean work areas, floors and trash, and help keep the bakery and café spotless.

🥐 Bakery Assistant
Assist with mixing, baking, portioning, decorating, packaging, prep, and daily bakery production.

🍳 Line Cook / Prep Cook — EXPERIENCE REQUIRED
Prepare breakfast and lunch items, complete daily prep, follow standardized recipes, and work efficiently in a fast-paced commercial kitchen. Minimum 1 year of recent commercial kitchen experience required.

We’re looking for people who are:
• Reliable and punctual
• Friendly and team-oriented
• Comfortable in a fast-paced environment
• Serious about cleanliness and sanitation
• Able to follow proper handwashing, safe food storage, labeling, rotation, temperature control, and allergen-safety procedures
• Willing to follow our strict 100% gluten-free food-handling procedures

Sorry we’ve been a little quiet… opening a bakery has apparently turned into an extreme construction show where the prize is just more work. 😂
My latest battle was FRP board and glue. At one point I was in a tiny closet, partially stuck to the wall, glue on me, glue IN MY HAIR—which was an absolute no—and having a full-blown argument with a sheet of FRP.
I’m just glad nobody was there to witness it. 😂
This build has stretched us pretty thin, but we’re finally getting to the point where things are coming together.
We’re now ordering the last pieces of equipment we need so we can move toward our final inspections. With all the effort—and what feels like every minute of our days—we’ve put into this place, we really hope we’ve created a pretty great space for all of you.
For the first time in a while, we can actually see the light at the end of the tunnel…
We’re just hoping it isn’t a train. 🚂😂
We’re getting close, and if everything keeps moving in the right direction, we may finally have some opening-date news to share soon. 👀

I haven’t had much time to post lately because apparently opening a bakery also means becoming the **general contractor, project manager, cabinet maker, problem solver, and full-time Googler of “how the heck do you build this?”** 😂

But—we’re chugging along!

🚰 **Plumbing rough-in: APPROVED!** One more inspection checked off the list. 🙌

⚡ **Electrical wall inspection: Monday.** Fingers, toes, and extension cords crossed. 😂

🪚 And in this week’s episode of *Things We Never Thought We’d Learn to Do*… my husband and I got a crash course in **building cabinets**.

Yes. Cabinets.

Because nothing says *“we’re opening a bakery on a budget”* quite like looking at each other with a drill in one hand and a piece of plywood in the other and saying, **“I think that’s right…?”** 😂

Now we wait to see if we actually built them correctly—and whether the countertops fit when they arrive. 🤞 If they do, we’re adding **cabinet makers** to our résumés. If they don’t… well, you’ll probably get another entertaining update. 😂

Building **The Missing Grain** has definitely been a lesson in doing whatever it takes. Some days we’re bakery owners. Some days we’re contractors. Some days we’re carpenters. And some days we just stand in the middle of the construction zone wondering **how a bagel got us into all of this.** 😂

But every inspection, every wall, every cabinet, and every “we’ll figure it out” gets us a little closer to opening those doors.

And because I can’t give you a construction update without sneaking in something you’ll actually get to **eat**…

🍞 **Here’s a little bread preview!**

Yes, it’s **100% gluten-free.** Yes, it’s real bread. And yes, we fully intend to make you question whether someone accidentally put gluten in it, but of course they didn’t. 😉

Because after spending our days building cabinets, passing inspections, and trying to figure out construction… **we’d better at least be able to bake some really good bread.** 😂

Turns out, opening a bakery involves a lot less baking and a lot more dust. 😅
Right now, we're serving exposed studs, concrete dust, and extension cords…but we promise the menu will improve. 😆

All jokes aside every day brings us one step closer to welcoming you to The Missing Grain.
Thanks for following along—we promise soon there will be more photos of pastries than studs.

🤫 Shhh... don't tell my husband I included the photo of him wondering what on earth his wife got him into while tearing up all that tile. 😂

🎉 **Building Permit Approved** 🎉

After months of planning, waiting, and dreaming, we're finally ready to start bringing our vision to life. Construction is underway, and every day will bring us one step closer to opening the doors to our dedicated 100% gluten-free bakery and café.

🍒 And because no celebration is complete without something delicious... here's a little teaser of our **Cherry Frangipane**—flaky pastry, rich almond frangipane, and sweet-tart cherries baked until beautifully golden.

Over the next several weeks, we're taking you behind the scenes. You'll get an inside look at the demolition, construction, equipment installation, and all the little details that transform an empty space into **The Missing Grain**. We can't wait for you to watch this place come to life with us.

Hey Permits, 🙄 what's taking so long? 🕰️ Our cinnamon rolls are ready to roll (literally!) but you're still MIA. 😂

Until then, here's a sneak peek of our freshly rolled dough and the finished baked goods. We're counting down the days until we can finally open the doors at The Missing Grain. 🎉 The people are getting hangry over here! 😂 P.S. Oh, and yes, our cinnamon rolls can be dairy-free too! 🙌

👀 Official Brunch Menu Item Sneak Peek!

Today's very important assignment: testing our **soon-to-be biscuits & gravy biscuit**. It's a tough job, but someone has to make sure every buttery, flaky bite is worthy of your breakfast. 😏 Yes, those are layers!

We've determined that one biscuit is good... but several more tests may be required. You know... for quality control. 🧈😂

We're getting one step closer to opening, and we can't wait to share creations like this with all of you!

Who else believes biscuits and gravy should be their own food group? 🙋‍♂️🙋‍♀️

Today was a significant day for me personally and for The Missing Grain.

Today, I walked into the Health Department and filed the application for our permanent food location.

For many people, that may seem like just paperwork. But for me, it represents survival, faith, and refusing to give up.

Years ago, my life changed after suffering a neurological injury caused by a pharmaceutical drug. There were moments I truly did not know if I would survive, let alone ever have the strength to build something like this.

My world became smaller. Simple things became difficult. The future felt uncertain. But somewhere in the middle of all of that, The Missing Grain was born.

What started as a necessity and a way to distract from what I was going through became a passion, and now it is becoming a real place — a safe, dedicated gluten-free bakery & café built with purpose, heart, and determination.

Today’s filing was more than an application. It was proof that even after being knocked down, life has a way of changing for the better if you give it enough time.

This journey has not been easy, and there is still a long road ahead, but today felt like one of those moments worth stopping to acknowledge. A quiet victory I’ll never forget.

Thank you to everyone who has supported and believed in this journey. We cannot wait to open our doors and share this dream with all of you.
