Today was a significant day for me personally and for The Missing Grain.
Today, I walked into the Health Department and filed the application for our permanent food location.
For many people, that may seem like just paperwork. But for me, it represents survival, faith, and refusing to give up.
Years ago, my life changed after suffering a neurological injury caused by a pharmaceutical drug. There were moments I truly did not know if I would survive, let alone ever have the strength to build something like this.
My world became smaller. Simple things became difficult. The future felt uncertain. But somewhere in the middle of all of that, The Missing Grain was born.
What started as a necessity and a way to distract from what I was going through became a passion, and now it is becoming a real place — a safe, dedicated gluten-free bakery & café built with purpose, heart, and determination.
Today’s filing was more than an application. It was proof that even after being knocked down, life has a way of changing for the better if you give it enough time.
This journey has not been easy, and there is still a long road ahead, but today felt like one of those moments worth stopping to acknowledge. A quiet victory I’ll never forget.
