Lemon Blueberry Not Brownies (Blondies)
1 cup all-purpose flour
¼ teaspoon baking powder
¼ teaspoon salt
½ cup unsalted butter-room temperature
¾ cup sugar
Grated zest from 1 lemon
1 large egg-room temperature
¼ cup freshly squeezed lemon juice
1 cup fresh blueberries
Glaze:
1 cup powdered sugar-sifted
2 Tablespoon lemon juice
1 heaping Tablespoon frozen blueberries
Instructions:
Mix flour, salt, baking powder in one bowl
In separate bowl beat soft butter, lemon zest, and sugar for 3 minutes
Add egg and beat for 1 minute, after that add lemon juice and beat until mixed thoroughly. Bake at 350 for 30 min or until light brown.
For the glaze, pulse 1 tablespoon of frozen blueberries and 2 tablespoons of lemon juice or lemonade. Strain blueberry bits and mix with 1 cup of sifted powdered sugar. Enjoy!
