New products, new directions!

We are changing it up…Dana got sick, bakery operations paused, Liv branched out, but Cian is still cranking out mushrooms! 💪🍄

In addition to shiitake, lion’s mane, oyster varieties and chestnut, he’s mastering cordyceps militaris, and we are prepping this coming season’s CSA offerings for Gathering Springs Farm and EatLoco One Loudoun.

We are sorry to tell you that we are closing down our operation. After 3 wonderful years, we have decided to pursue other passions and accept an opportunity to live and work in Porto Vecchio, Corsica (where I spent many great summers).

While our commitment to organic food and ingredients will never change, we will dearly miss all of our friends and familiar faces. Loudoun has an amazing community of people committed to the best agricultural practices and has some of the richest soil anywhere.

We miss you already and wish you the best April 1st and upcoming Easter holidays. 💟☮️✝️✡️🛐☯️

We are growing, yay! We are also changing and evolving...while sourdough has been a staple (and a pure joy), there are only so many projects we have hands for.

We will continue making some of our enriched sourdoughs (you can always special order old favorites), and we will have new capacity for hummus, dips, pasta and raviolis!

Many of our customers have met Cian (Cian-is-believing) who is expanding his mushroom lab, and needs more space. He has an exciting partnership announcement of his own coming soon!

So we will continue seeing you all at the Markets, and the Natural Mercantile, and we’ll get to add more locations and delivery options in the coming months.

What’s for dinner? How about mushroom soup and sourdough brioche buns?

Mushroom Soup recipe:

Chestnut mushrooms
King Oyster mushrooms
Yellow Oyster mushrooms
Celery
Garlic
Turnips
Radishes
Carrots
Kohlrabi
Spinach
Parsley

Place all the ingredients chopped in a pot with water to cover and boil for 25 minutes. Season and serve.

Sourdough brioche made with eggs and patience.

Grab a bottle of organic wine 🍷 from and say mmm 😋

Did you know that many (if not most) commercial bakers use 1-2% yeast in their sourdough? Why? It allows them to speed up the process of fermentation and gives bigger holes to their bread. It can shorten production times by 12-16 hours.

All yeast brands made in the USA are preserved with sorbitol monostearate, a synthetic wax emulsifier; that may be what’s behind gluten intolerance, especially when combined with sprayed and GMO wheat.

We are unique because all our breads are made from one of two aged sourdough cultures, and our enriched doughs, like Brioche and Pan Cubano, are made with sorbitol monostearate FREE organic yeast.

Our wheat 🌾 is organic, mostly locally sourced and hand milled, and never sprayed, bleached or bromated. It’s also why people say they don’t get a stomach ache or allergies after eating our bread. Others don’t care but they notice our bread has a better keeping quality.

Whatever your reasons, taste and/or health, we’ve got your back!
