One of my favorites is pumpernickel rye; it has layers of flavor and color from blackstrap. It’s a straight sourdough with a denser crumb…my grandfather loved when I made him ‘brown bread’.

Saturday mornings 9:30-3:30pm!

We will now open at 9:30 on Saturday mornings and close at 3:30 in the afternoon. The rest of the days of the week we are open from 11-6 PM. We are closed Tuesdays and Wednesdays. 🎊🪅

Bread talk:

Never put your bread in the refrigerator, it causes the reverse crystallization of the starch molecules, and your bread will become very rubbery. However, sourdough freezes beautifully, and so do the enriched doughs.

I keep my bread in a paper bag or a bread box or in a cupboard. I also use paper bags because the plastic bags promote Kantha mold.

The best way to heat up frozen bread, is to place it frozen in a cold oven and turn it to 350° for 17 minutes. If your oven is already hot, thaw it on the counter and then place it in a 350° oven for five minutes.

Old bread gets reinvigorated with a light toasting, and it’s also perfect for French toast.

Week 2 with the new ovens is even better…I actually got to the point of too much steam (because of the 6 steam pods) which I really didn’t think possible. It’s been a thrill to bake with them and gets us closer to opening day. I’m officially ready to wear a Team Rofco hat now!

We will not have mushroom burgers this week, but we will be back with those on 6-21 for summer solstice!
